As someone who works in the food industry, unless you're changing your gloves after touching each food item it's actually more sanitary to just use your freshly washed bare hands
Don’t know if you noticed but just to let you know, if you watch she is touching the strawberries with an ungloved hand when she pulls them apart. She also isn’t wearing them when she places the kiwis and her long nails touch them. Typically those who work in preparing food have very short nails because nails harbor HUGE amounts of bacteria. She also placed all the crackers barehanded. Only thing she wore gloves for was the meat and cheese. Cross contamination would make everything the same as not wearing them at all.

Unfortunately, the cheese and salamis on that board are glaringly low-quality. It amazes me that marketing of some brands is able to convince people that the food is good quality.
Btw, it'll be easier to use a pairing knife to make those fruit cuts. If you don't have one at home, pinch the top knife a few inches below to tip to give you better control. Cup the fruit in your hand and carefully make the zigzag design. That is how I was taught to make delicate cuts with a chef's knife in my classes.
Kiwi, strawberry, pretzels seems a bit unusual to me for a charcuterie board.. As someone from the U.K., we would usually do a variety of cheese and cured meats with spread or sliced fruits (I.e., figs, pear, apricot or apple) and have olives, and other things for example like sun dried tomatoes etc.
