How to Make Caramel Apple Cider

  • Today I am showing my version of a caramel apple cider. It uses a caramel sauce as a base to which we will add our own homemade apple cider. This stuff is sweet, but not too sweet. By making the cider from scratch, you can make a caramel apple cider that isn't overly sweet. It has the added benefit that making this will make your whole house smell amazing.

    Ingredients:
    Apple Cider:
    12 Semi-sweet apples (I used honeycrisp)
    1 Orange
    4 Cinnamon Sticks
    2-3 Cloves
    Caramel Sauce:
    2 Tablespoons (30 mL or 28 g) of Butter
    1/3 cup (80 mL) of Heavy Cream
    1 Cup (200 g) of Sugar

    I just tried this recipe and I love it. Partially because it's so easy to just cut some apples up and leave them simmering, partly because it gave me an excuse to finally make caramel (well, to make it twice - the first batch came out burnt and...wow, burnt caramel does NOT taste good). I used sweet apples and added a little vanilla and honey when they were simmering and it turned out just great (I have a sweet tooth anyway). I'll probably be trying it again!

    I just made this using some overripe apples and pears I had lying around, and I agree, I was completely surprised at how good it was. I’ll definitely be making this again in the fall

    Great video! I'm thankful that you included the measurements in the comments. I made this and it turned out great, although my first attempt at making the caramel sauce didn't go well and I burnt it. So for my second caramel attempt, I made it with a little water and it helped keep the cooking uniform :D

    That looks more like an ”apple must” to me than cider. Were im from, the cider is clear and sea-thru, and almost looks like white wine but with a more green/yellow colour to it. Because I didnt know that cider is diffrent, dependning on were you live. Like i am from Sweden its totally diffrent!

    My mom would always cut apples that way so I could eat the good parts off the trimmings. It's a great way to keep the kids busy lol

    If you add a bit of water to the sugar it will melt more evenly but it wil increase the cooking time slightly if you do larger quantities add the water to the bottom of the pan that will keep the sugar from burning without it taking to long for the water to evaporate

    Might have to try this and then ferment with a cider yeast. Use a good Wyeast 4766 with some yeast nutrient. ...and then secondary ferment for 2 weeks using some pectic enzyme.

    i live in a rural area with a lot of apple trees and it’s a common event for someone who owns an apple cider press to invite over like 20 families and everyone brings a bunch of apples and take turns turning the crank for the thing that crushes up the apples and then use the twisty thing to press out the juice, it’s a whole event and usually it’s the kids that turn the crank, and at the end of it everyone gets a couple gallons of apple cider to take home, i don’t remember all the details because the last time my family was invited to one i was like 10

    I find when I make caramel, adding some water to the sugar in the initial stage saves scrubbing later. It just takes a few minutes longer to evaporate the water.

    The leftover fruit from cider making is called pomace. According to a book I read, pomace was traditionally given to animals as feed.

      Actually, "compote" (in polish "kompot") comes from French and it's word for 'mixture'!
      Also, in the very same countries that use this word, naming "cider" for something without alcohol is unheard of, right? :D

      "unheard of" means it's something nobody would even think of, so I said that in european countries (and probably other than european too) noone would name "cider" something that doesn't contain alcohol. ;)

    I noticed you left the pot’s lid slightly ajar while boiling it down for 2 hours. Is that something you want to do for the entire time? I’m thinking about making this recipe for thanksgiving and I hate to lose half of it to steam lol

    So. Just made this. Used an instant pot. It turned out ok, but.... If going the route using an IP, DITCH THE ORANGE! It extracts the bitterness from the rind that you don't get so much of in the stovetop method.
    I went with high pressure cook for 45 minutes. Everything was super soft, but maybe a bit too soft. So I'll dial it back to around 35 minutes next time.

    4:26 I always stir my caramel and it always works. But I am using a thick enamelled cast iron pot, so maybe that makes it easier? I don't know. I just know, that I am always doing almost everything wrong, but it works perfectly.

    Came here to learn how to make caramel Apple cider was disappointed when I learned Americans call Apple juice with no pulp Apple cider. But it is a good looking drink I'll give it a try either way

      I’m North American and I didn’t grow up calling unfiltered apple juice apple cider... to me apple cider is hot apple juice that’s mulled with cinnamon and other mulling spices. Even North Americans can’t agree lol

    Not sure where you live , but here in Washington state, fresh Apple cider is usually fresh pressed apples with no sweetener.

      Try doing it at a lower heat, are you using a cast iron pan?

      Making caramel is hard the first few times, once you get it, it becomes a lot easier in the future. I for sure burned my first few batches. Good luck! I am here if you have more questions

      i was using a stainless pan but i think it was to small because the bottom would melt long before the top

      @@cobyclelland6306 that is indicating to me that the burner was set too hot, I would put the burner at at least 1/3 -1/2 of what you had it at. Hopefully this helps!

      Store it in a sealed bottle, then boil the bottle, cool it slowly so it does not break by the temperature difference. If the seal keeps it sealed it should be able to be stored for a long time in a dark and not too warm place as all the bacteria inside it is dead.

      @@danielnykvist3221 Thank you, for the tip! Made mine today. Had to add a bit of vodka tho because I burnt my caramel a bit. Alcohol covers up the flavour quite well! Overall very satisfied. Next time I will have to be more careful with the caramel :)

      Someone said they did, he said don't put orange in it or it will be extra bitter in the instapot, and do about 35 minutes on high pressure.
