Applesauce Cake with Caramel Frosting

    I always go back to simple recipes that have been used by my family for years. This applesauce cake was my grandma's recipe: a simple snack cake that can be stirred together in one bowl. Perfectly spiced for autumn, this is a weekend cake that's so good you can entertain with it!

    INGREDIENTS:
    For the applesauce cake:
    - ½ cup butter, room temperature
    - 1 cup sugar
    - ½ cup dark brown sugar, lightly packed
    - 2 eggs
    - 1 ½ cups applesauce
    - 2 cups all-purpose flour
    - ¼ tsp baking powder
    - 1 ½ tsp baking soda
    - 1 tsp cinnamon
    - ½ tsp ground cloves
    - ½ tsp ground nutmeg
    - 1 tsp salt
    For the caramel frosting:
    - ¼ cup butter
    - ½ cup dark brown sugar, lightly packed
    - ¼ cup whole milk
    - 1 tsp vanilla extract
    - 1 cup powdered sugar, sifted
    - ¾ cup walnuts, toasted and chopped
    INSTRUCTIONS
    For the applesauce cake:
    Preheat oven to 350°F.
    Grease a 9×9 cake pan with nonstick spray. Line with parchment and spray again. Then set aside.
    In the bowl of an electric mixer, cream the butter and sugar until light and fluffy, 3 minutes.
    Add the eggs one at a time, mixing in between each until incorporated.
    Mix in applesauce. The batter will seem very loose and curdled, but that is completely normal.
    Add the flour, baking powder, baking soda, cinnamon, cloves, nutmeg, and salt. Mix until just combined, 2 minutes.
    Remove bowl from the mixture and use a spatula to scrape the bottom of the bowl, ensuring the batter was mixed evenly.
    Pour into prepared pan and bake until a toothpick or skewer inserted into the middle comes out clean, about 35-45 minutes. While the cake is cooling, make the frosting.
    For the frosting:
    In a 4-quart saucepan, combine the butter, brown sugar, and milk. Melt on medium-low heat, stirring occasionally. Continue to cook until the mixture begins to boil and boil lightly for 2 minutes. Remove from heat and cool for 10-15 minutes.
    Add vanilla and sugar. Whisk until smooth and thick.
    Once the cake is completely cool, frost the cake. Sprinkle with toasted walnuts if desired.
    NOTES
    To maintain freshness, this cake freezes well in an airtight container up to one month.

    I made this spectacular cake yesterday...wowza! I made a little extra caramel and separated it out and saved it as a caramel sauce to drizzle over ice cream (and a little on the cake for good gooey measure)...and added a touch of sea salt. Not that it needed anything else because it was already perfection, but yes...gilding the lily. 😉. My fondest memories are with my grandparents on their 500 acre farm in Missouri. Grandpa would put me and my little brother in his old Ford pickup and say, “Let’s go look at the crops!” We’d wander forever in those beautiful cornfields. It was the closest thing to Heaven, in my mind. Your love and respect for your parents and grandparents is a beautiful thing, Kaleb. ☺️☺️

    😞I just put my cake in the oven.
    I used the last jar I had of apricot butter, got distracted, and wasn’t sure if I added ALL the flour. So I watched your video again and tried to get a good look at the texture when you poured it in the bowl. Ugh.
    Fingers crossed! Lesson learned..pre measure and focus 😇

    OH My Goodness! My great grandmother made applesauce cake and it was the food of the gods. (She used home-made applesauce as her frosting because we had the tree: honey-golden) Love your videos! Thank you :)

    I made this the other day from scratch in a bowl with a mixer just a fork don't like gloves left it out and it came out delicious I used a 9x13 dish it was so moist and delicious made it like they did back in 1920's

    Thank you so much for mentioning the divot in some of the mixing bowls. I was surprised when I first used my new mixer and I went to put the batter into the pan and there was a totally unmixed area right in that divot. #GreatTip

    I made this applesauce cake this morning and it came out beautiful. I also made the caramel frosting was a double whammy of sugar was just tooo sweet for me. To remedy this, I will scrape off the frosting along with the toasted walnuts and serve the cake with a dollop of whipped cream. We learn by experimenting new recipes.

    Cake is definitely a lovely catalyst for frosting... as is a spoon... or a finger, depending on the circumstances! And as far as wedding cake frosting goes, it may run a close second as the reason to actually go to the wedding! 😉😂😋

    My mom made something similar to this, with nuts and chocolate chips, minus frosting. So moist and delicious! I'm definitely making this frosting though! I just have to figure out the cake part.

    Do u ever add brandy or spiced rum? I find it keeps them moist longer. And I buy that bakers joy spray several cans at a time as I bake a lot.
