Russo's quote "its easy to kill someone, just forget the taste of sugar" is one of the best quotes in the show imo, in other words, to forget about your own joys in order to forget that others can have joys aswell, practically dehumanise yourself first to dehumanise others. The sugar represents the simple pleasures in life, things that seem minimal, yet make up everything. Despite having a very black and white view on life, something as simple as tea and sugar was enough to make him realise the simple joys in life, joys which allow people to connect and form relationships [Thus, Russo opens a café and forms friendships with his costumers]. It's also really well fit into the narrative, relating to other characters (more specifically, kinderheim subjects). Children that lost all ability to feel empathy because they lost the ability to experience joys in life [Grimmer references this in his speech about not being able to feel emotion]. That's why they all have a desire that they hold in significant value even years later, joys in life that prevent them from fully becoming monsters. For Roberto; it was the taste of Hot chocolate, for Grimmer; it was the Magnificent Steiner, and for Johan; his twin sister.
