    I thought i was crazy when i decided to make my own mugi miso with normal koji & cooked barley. It turned out so sweet & tasty after fermenting overnight in keep warm mode of my rice cooker. Now that i look at the mugi miso in this video, it looks just like mine. Then my mind was blown again hearing the miso lady said it’s best to keep miso paste in freezer which i did. I put my fresh miso into silicone ice cube tray with lid and put it into my freezer for 24hrs. When it’s frozen solid (my miso paste got more liquid), i pop them into freezer bag for storage. So i simply grab 1-2 cubes to make soup or dressing. So convenient. Now i know i’m not crazy to keep my miso paste in the freezer since i live in a hot place.

    Oh my goodness, just the other day I was thinking about what if soup bowls had handles, it would be so much easier, and now I see they have bowls like that in this shop-restaurant! So cool!

    Wow! I knew of four varieties of miso, but 70! Thank you for sharing this adventure. It is fun to learn more about a key ingredient in many Japanese dishes and what makes it so unique. I am looking forward to your next adventure!

    Thank you so much for another wonderfully informative video. Like other commenters, I had no idea there were so many varieties of miso, or that they pair well with different foods. Until today, I'd only ever heard of red miso or white miso!

    I really enjoyed your video about Natto, but this video was more interesting to me, because miso is such an important and frequently used ingrediance in evety day japanese food (as I have understood it) And learning how many kinds there are and also who best to store it was amazing 😄 Thank you again and hopefully you will make more such interesting videos about the uniqe japanese food and ingretiances. ❤
    I knew of 4 kinds of miso and have tried yellow miso (I don't know if it also is called that in Japan. A mix of a larger part white miso with some red miso) in supe woth wakame and tofu, it was really deliciouse 😀

    Oh man, I would be in SO MUCH TROUBLE if I lived near that shop! Especially since it looks like you can just buy the amount you want. I'd always be trying out new ones, and have a variety on hand at all times!
