Great soup. Tweaked it a bit and added crushed red pepper. We enjoyed a big bowl tonight with supper. Had so much left over, I'm going to freeze it and use it as a base pasta sauce.

Every time they call me over for a hand with something, I always end up taking home a bag of a few tomatoes as thanks. My freezer gets lined with mason jars of tomato sauce every year - and I think I'll be making a few jars of tomato soup now, too! Even with the canned crushed tomatoes (which I use, too) - this is a new recipe to me.
Love tomato soup with a grilled cheese sandwich, try making an extra grilled cheese and cut it up into small squares and use them as croutons on top of the soup mmmm mmmm

I would love to just hang out with Mr. Rollins one afternoon. Love his laid back personality and dry sense of humor. Especially this day-in-age when so many people are so high strung and/or focused on so much superficial nonsense that in the end won’t amount to a hill of beans. He just seems so spiritually at ease…it’s great! “…you could just get a straw and go to town.” Love it. 😂

Your recipe is just like my mom used to make when we were kids in the 1950s. Tomatoes from the garden or canned from the basement the rest of the year. We had no blender. The stewed tomatoes and cooked onions were processed in a Foley food mill. I got to help turning the crank. Fun for a 5 or 6 year old. She added two things. Crumbled bacon on top and homemade whole wheat buttered toast cut into one inch strips for dipping. Boy, does this bring back some good memories.

If you can’t find fresh basil a good substitute is basil pesto. I always keep a jar of it around. A spoonful of it really brightens up canned soup too. Not to mention it’s a great marinade for chicken breast on the grill.
It's wonderful to see Shannon. This soup reminds me of what my mom used to make. We canned tomatoes every summer, and in the winter we had so many thing fixed wit them. She'd use a couple of quarts of those home canned tomatoes, some onions from our garden, seasonings, and always real cream. It was absolutely delicious. Great soup love it that way myself. Always keep in mind that canned foods are already cooked as part of the canning process to kill any bacteria and give a longer shelf life, so a 30 minute simmer may not be necessary if it is hot sooner. Remember you already sautéed the onions as well!
The interesting thing is, as you add different ingredients (chemical compounds of those ingredients rather) and apply heat to it, it breaks down more of the original ones from all the ingredients and makes newer small compounds (flavors essentially), so it gets more complex or tasty. That's why I think it's there, but in a hurry you can eat it sooner and let the leftovers be the complex one, as that's been over the heat longer reheating and all that. Also learned that the order you season in has a difference in taste, for a bit of the same reason, as it chances the first tastes that hits your tastebuds so to speak. I have some sources on this if people are interested. Sorry for geeking out on you here, also i find cooking it for a bit takes away some of that tinny taste of canned tomato products.
Kent and Shannon this recipe looks good and low carb for those of us who have to watch the carbs and sugar. Might I suggest using a can or two of Rotel in the tomato soup for a variation!
