ROASTED GREEN TOMATO SAUCE VERDE

  • 8 LB GREEN TOMATOS
    3 LARGE ONIONS
    3-4 JALAPENO PEPPERS
    6 GARLIC CLOVES
    ROAST AT 450F FOR 30 MIN, TURN AFTER 15 MIN
    ~~~~~
    2 TEASPOON SALT (OR TO TASTE)
    1 TEASPOON BLACK PEPPER
    1 CUP LIME JUICE (OR WHITE VINEGAR)
    1/2 TEASPOON CUMIN
    1/2 CUP FRESH CHOPPED CILANTRO (OR 2-3 TABLE SPOONS FRY)
    ~~~~
    Blend all in the food processor or blender
    cook 15 min
    ~~~~~
    Water bath processing quarts- 25 min, pints-20 min

    You are amazing. I've been canning tomato's for many years and you showed the same canning process I use. I've canned whole green tomatoes but never thought of canning a Verde sauce. Going to do it this year. Also, I love the fact you pointed out its a recipe that can be adjusted to the canners taste. Recipes to me have always been guides, not a constant. I love hot and never remove the pepper seeds when pickling or canning my peppers. Luli, Thank you very much! for another great and informative video.

    I do wrap and keep in cold room. I have fresh tomatoes till Christmas. As long as the tomatoes are shinny they will turn red. The dull ones i turn into green tomato relish.

    Great video. I make chow chow or cut the green tomatoes up and mix them with my okra to fry in the winter, so delicious. Thanks for sharing and have a blessed evening!

    I live in Ontario Canada and we are having below 0 temperatures at night. I harvested the green tomatoes about two weeks ago but didn’t know what to do with them. I quartered them and put them in a pot and cooked them down to sauce. I had my son run the sauce through a food mill and remove the skins and seeds. I think I have about 3 quarts but because it was just a small amount I put it in 3 ziplock baggies and froze it. I didn’t add anything to the tomatoes. I was thinking I could make a pasta dish with one bag and green tomato soup with another bag. I will have 1 more bag after that. Thank you for sharing your green tomato recipe. Ps. I forgot to mention my tomatoes are Green Zebra Tomatoes and are sweet.

      I am running out of freezer space. I still have lot's of other vegetables to harvest from the garden.

      My garden has all died back and my sons have pulled out the dead plants. I planted my garlic yesterday all 80 cloves. I got some garlic bulbs from a farm and I’m planting that.The garlic you buy at the grocery store won’t grow for some reason. A store gave me some dead potted daffodils last Easter for free so I put them in my garage. I emptied the pots yesterday and took out the bulbs. I’ll plant them in my garden at the front of the house. I pray the daffodils will pop up in the spring.🙏🏻. I wish you Gods speed getting your harvests in.

    Your timing is awesome! I have so many green tomatoes! Here in Oregon my tomatoes never got red this year unless I brought them inside.

    I use a large cookie sheet to roast tomatoes, olive oil and onions. Sauté garlic and peppers together with olive oil.

    I guess I'll need to try this as I've already canned green tomatoes to fry later and the sweet green tomato pickles. My DIL is from Ukraine and her grandmother used to make them, she likes mine but I wish it would have been possible to have had her grandmothers recipe. I already have to much relish in the pantry.

    I hope this works with frozen roasted green tomatoes! We planted late and were caught by frost and had to do other stuff, so we roasted and froze them in vacuum sealed bags... I'm crossing my fingers here XD

    I keep my green tomatoes. They eventually ripen and I have fresh for months.

      Thanks, I will fix it. Wasn't sure how to spell it. I guess there are two sauces Verte and Verde. VERTE is more of a fresh sauce/dip for bread made in France. Thanks again!

      I do that too! I take my last green tomatoes off the bush in late November from my greenhouse, my мама taught me. We end up eating our own tomatoes on New Year.
