Sourdough Buckwheat Bread - Gluten-free!

    Ingredients
    3 C buckwheat (will make 6 C after sprouted, use all)
    1 1/2 tsp salt
    1Tbsp lemon juice
    1 1/4 C water

    Even my toughest critic liked it! Yum. Will definitely be making it again. Wondering if other pseudo grains can be used for those that can't eat or don't like the taste of buckwheat?

    Hi Mercy. Amazing recipe. I was looking for something like this and you have done all the work for us. As a feedback, it raised beautifully - it actually overflew the loaf tin - but I added some additional heat (below 40 degrees Celcius) to help it.
    I need to confirm something with you though. In the video, after you add the lemon and before you add the rosemary, you add something. Is is the remaining salt that was stuck?

    There's no sourdough starter in the recipe and I didn't see any added so what's up?

      she doesn’t know what real sourdough means
      she used yeast and it’s bad for your gut 😢

    How is this sourdough if all your using is buckwheat ? Also, I noticed that in the ingredients list you did not add rosemary? Can you explain how to buy and make buckwheat for a beginner and full recipe with rosemary

      Buy organic hulled buckwheat and see an earlier video to how to sprout than follow the recipe, you can add 1/2 tsp rosemary ground but is not necessary

      12 hours soak, 12 hours sprout, see an earlier video about sprouting

    Can you use organic buckwheat flour? If so how much flour?

      It would have to be hulled sprouted buckwheat flour I would try 2 cups

    I only had small loaf pans and had to split the loaf in 2, should I still cook for 75 min?

      I would cook it for 60 minutes

      @@besthealingfoods9618 I shortened it and checked at 40 and 60, they were not all the way done so I did end up going to 70-75 even in the small pans

      She added yeast just before the Rosemary. She doesn't know what sourdough means.

      It is possible would have to be sprouted and you would have to experiment for the ratio

      I have not tried the flour, but it is possible, it would have to be sprouted, you would have to adjust the water and flour amounts

      It’s the salt, just didn’t all come out when she dumped it so she scraped it

    I tried it but it didn't rise for me. It tastes good. I don't know why it didn't rise though.

      Probably needed a warm environment to raise

    Mercy. Aren’t we told that sourdough is not recommended by EG White. ? But what makes it sourdough? There is only 3 ingredients. Is it because it raises for several hours??

      It is “sourdough”, raises in 8 hours and we apply lemon so no harmful bacterias

      Should you slice and freeze. ?? How long can you leave out. Or keep in frig? Thanks 😊

    would it be good to add maybe half sprouted oats and some flax seeds into the mixture to be ground and sprlnkle with sesame seeds? could you also put parchment on cookie sheet and top with this to make a flater bread and maybe cook faster, think it would be good also ?

      We do not use grains such as oats since grains required longer cook time
