asian chicken salad recipe:
salad:
1-16oz bag coleslaw (shredded cabbage)
handful of matchstick carrots
1 rotisserie chicken
green onions (however much you want basically)
handful of cilantro
a tiny bit of ginger (much less than I used... I got excited.)
sliced or slivered almonds
two bags ramen noodles (creamy chicken or chicken flavor)
dressing:
2 packets of ramen flavoring
2/3 c vegetable oil
4 tbsp sugar
2 tbsp white vinegar
Crush ramen noodles in packages before opening. Mix all salad ingredients in a big bowl.
Mix all dressing ingredients in a small bowl. Mix it all up!
(optional)
mandarin oranges
sesame seeds

Our fridge when kaput at the beginning of quarentine, but we had to replace it immediately. When the delivery/instillation folks showed up from Costco, they were outfitted with masks and gloves and the whole bit. This to say that if you're worried about having people in the house ( totally get it), THEY'RE worried about being in YOUR house too and take the necessary precautions. So if you get to where you can't or don't want to keep putting it off, I didn't find it to be so bad. Just something to consider.

I have a favorite lettuce-free salad! Keeps in the fridge for couple weeks. Basically Chickpeas, diced up red onion, peppers, cucumber, tomato, and red cabbage. This Asian salad looks so yummy, I'm definitely trying this with the next chicken I buy

Growing up my mom always made her coleslaw recipe with adding crushed ramen noodles for crunch. It’s sooo good in a homemade slaw I love it in an Asian salad too. I wanna make this and add those little sliced mandarin oranges 😍 there’s an Asian chicken salad at the cafe in Nordstrom and it has those little oranges and ugh now I gotta rearrange my grocery list today 🤣

My mom made a Thai version of this salad. The sauce consist of fish sauce, lemon/lime ice, sugar, garlic, and chili (optional), Top it with mint, cilantro, green onions, and crushed peanuts. It’s really delicious 😋

I do put mandarin oranges and edemame in my Asian chicken salad. I even use the juice from the orange can to make the dressing. It’s absolutely phenomenal. I got the recipe from a 5 star chef in New Orleans. It’s seriously incredible!!
