It goes like this….20 years ago I purchased a crepe pan with every intention of learning to make crepes. After 1 disastrous attempt, the crepe pan ended up in the attic. Fast forward to John’s video; as soon as I found that old crepe pan, I began my preparations. My original crepe recipe called for butter and a 24-hour rest in the refrigerator; I threw it away (it didn’t work anyway) and proceeded with John’s version. My old crepe pan rose to the occasion; when I flipped the first crepe, it looked beautiful. A good kitchen day!

I always prefer the sugar and lemon 🍋 ones, that’s what we had as kids in England growing up and still prefer the English style pancakes over the Canadian buttermilk thick ones, always reminds me of home.

Lemon and caster sugar, English style for the win.
A little thicker than french crepes and a lot thinner than American/Canadian ones. Just perfect 👌
Can't believe there's no lemon and sugar. Pretty sure it was a legal requirement when I was a kid.
Jif lemon and caster sugar… or butter and sugar was another favourite.

I learned to make pancakes from my mum. The method she used was very similar. The recipe was 4oz plain flour, 4 fluid oz milk, 2 large eggs and a pinch of salt. My mum never added butter or oil to the mix and just added a knob of butter before frying the first pancake to season the pan but thats it. Oh and she let the batter rest for at least 2 hours but ideally over night. Simple and delicious.
I go with Mrs Beaton, 1pt milk, 8oz flour, 2 eggs and a ¼tsp salt. Every Sunday morning we have pancakes, with sugar and lemon, maple syrup, or Golden Syrup, and best of all, bacon or sausages!
I make my pancakes with the same batter as my yorkshire puddings.
We have them with either lemon and sugar or treacle 😋😋😋
That's what we're having for tea later on ...

I made these by accident near Christmas. Added to much milk to my mix. I made them up and added a homemade cranberry relish and a bit of whipped heavy cream. Delicious! Nice to have a recipe!!

I was in the UK two years ago for the birth of my grandchild and got to experience pancake day. My son in law made them in a few different ways. It was so much fun!
Having grown up in the north east, I've always been a fan of the lemon and sugar variety. Now I can grab a lemon from a tree in my back yard, it just makes it seem even more home made.

Love trad pancakes with lemon and sugar! I make extra and freeze some them fill with a savoury mix, roll up and use like canneloni in a pasta sauce - quick easy and tasty supper.
We had pancakes yesterday (Shrove Tuesday here in NZ). And we had them the English way, with lemon and sugar. It is my favourite way to have them. My husband quite likes them with syrup, but opted to do as I did last night, too! Delicious and really takes me back to my childhood, beside the stove as Mum made enough for the whole family. Fabulous memories for a 60's baby! xxx

It's super interesting because the Dutchies make their pan cakes this way as well, quite thick and generous. In France we tend to prefer them more thin (a good half thinner). So we generally make the batter rest an hour, because it will thicken, then we add some water to make it runnier, and we use pans with very small edges so we can easily remove the excess batter from the pan (we call it crêpière, or crêpes pan).
Another trivia, in the Netherlands they make veeeeery tinee-tiny Canadian-style pancakes called ''poffertjes'', you should try them, they are a very nice treat with syrup! :D
That's how we make pancakes in Germany, too. In my family, we enjoy both this and American/Canadian style pancakes. It's nice to have the variety.
I do love a pancake with sugar and lemon. I don't add any oil to my batter.

EDIT/UPDATE: I made these this evening and they turned out phenomenally good! I made up some unsweetened whipped cream and also used ham and mozzarella cheese. A fine, medium-light supper.
My brother and I used to make pancakes like this, that was decades ago and honestly I'd forgotten about these (I've made thousands of American/Canadian style ones; but the crepe like ones kind of fell out of my mind). I'll be making a stack of these presently! Thanks as always for sharing!

I fill mine with a boulognese sauce with a finely chopped green pepper added to the ingredients. Once rolled up drizzle them with some blended home made tomato sauce cooked with onion garlic organon and basil. Had them last night and they were really yummy. I got this recipe from a very old Italian cook book.

Hi John, love your cooking tutorials. Yes, here in South Africa we make these pancakes as well, with runny batter and after cooking those thin pancakes get sprinkled with a mix of brown sugar and cinnamon. It's a lovely sweet herb mix you get when biting into them. We also do make the USA type op thick smaller pancake, and that batter is less runny, but we call it flat cakes or flap Jacks, or my home language, which is Afrikaans, plaatkoekies. As grannies since 1652 made them on the old coal stove tops, no pan or special tool. So I guess when our French and English Forefather come to South Africa, many recipes came with. Pancakes here ae also served with spicy mince, chicken and mayo, ice cream and honey or syrup, much like what they add onto waffles here. Not a dry waffle as some countries serve.

@@ffotograffyddFrench crepe style? Because those are crepes. They're good, but they're eggier than American/Canadian pancakes and the texture takes some getting used to. They are good with ice cream.

I just made these British style, thin pancakes for Shrove Tuesday, and I must give you a heartfelt thanks John, for this perfectly timed recipe video. Let me tell you, they were FABULOUS. Fabulous both to cook, and to eat!
I halved your recipe, because I was making them for just one person, my 86-year-old dad, the only family member who loves pancakes (always with fresh lemon juice and sugar). He's a tough audience, and he gave your recipe an enthusiastic, 5 Star, THUMBS UP! 👍👍👍👍👍
Halving your recipe made him 3 pancakes, which he thoroughly enjoyed, but there was some left over and it would have stretched to 4, maybe 5. And they are lovely, thin pancakes too, which flip easily and don't stick to the pan - VERY important!
A few weeks ago I answered Dad's sudden pancake craving, using a UA-cam recipe (whose author shall remain nameless). It was DREADFUL! As I poured the overly-thick batter into the hot, buttered pan, I immediately suspected it was sticking to the bottom. OMG - I was right. I had to scrape off the batter THREE TIMES and start over, before I realised that recipe was a total dud, quickly washed out the frying pan, and made a fresh batter from scratch, from a totally new recipe.
The pancakes that followed were fine, and Dad ate and enjoyed them. But he confirmed today that yours were WAY better John. And as the lady who prepared them, I can confirm the pancake batter was perfection to pour So again, thank you John for providing the ultimate thin, British pancakes recipe, perfect for both sweet and savoury eating.
Incidentally, a basic, fail safe pancake recipe like this should be in every home cook's repertoire. Because not only is it versatile as a vegetarian item suitable for everyone, it serves as a wonderful substitute for pasta if you have none in the house. You can make the most wonderful substitute LASAGNE, filling a stack of pancakes with either beef bolognese or vegetarian mushroom mixture in an ovenproof dish, rolling up the filled pancakes, and then pouring a gorgeous white/cheese sauce over the top (with a final flourish of grated cheddar/parmesan cheese).
No one would refuse a delicious supper like that, especially served with a simple fresh salad and garlic bread alongside - YUM! Your pancake recipe will be my go-to forevermore John, and my dear Dad's too - thank you!

When blueberries were in season Mom added a bit of crumbled bacon to the batter and rolled them with blueberry jam.
A Northern friend of mine mentioned having savoury fillings in pancakes and I thought it was odd at first but now that I think about it the pancakes themselves aren't really sweet, they're just wraps, since then I've come to enjoy a bit of peanut butter or cheese on a savoury pancake from time to time.
Nice with a bit of bacon and egg, or stewed apple and yoghurt

This is fascinating! I was reared on American style pancakes (the Deep South version) and had no idea British pancakes were so different. Are they very different from crepes? I guess it doesn't matter - I think I'm going to inaugurate a Pancake Day for my friends and serve these. They look yummy!

I forgot it was pancake day today, so I didn't buy anything. I ended up getting into the real spirit of the day and used whatever I had lying around in my kitchen. Some lemons and brown sugar, some maple syrup, some chocolate spread and hazelnuts.

Nice work John! But you missed the blast from my past thing that I recreste most pancake Tuesdays, the savory Findus pancake Mine are always MUSC bigger than the original ones (no way I could make them as small as the originals) but a folded pancake (I guess it's like aMexican Quesadilla) packed with whatever you like - especially any of those childhood memories ... Cheese and ham etc. You do need to dredge them in egg and breadcrunbs and fry them but they are lovely.

You are corret, fluffy NA pancakes with raisons topped with melted butter and real Canadian Mape Sryup accomanyied by either a couple of breakfast sausages or rashers of bacon along with a couple of over easy fried eggs make for a great breakfast, English pancake make a great snack or dessert.

We make them exactly like this in Germany, too! I love them with green salad or with red jam (any sort) ❤
We used to eat them with peas and carrots in white sauce, sometimes stacked to form a cake.
The pancakes look great (I prefer the savory ones), but the flip flex was the best part of the video.
