I really enjoyed this video. Especially how Nick addresses the form of the back of the plate. Also, I learned how to cut the rim, (something I've struggled with every time I try a plate or platter.) The information on the texturing & how leaving the center mass until the last part to avoid the flexing of the rim was brilliant. I wish we could afford to have Nick demo at our wood club. Enjoyed this. Have made several bowls, usually out of walnut. I'd like to use a soft maple, but all I can find online is hard maple or something similar.....what exactly (and where can I find it) do you mean by soft maple ?

Soft Maple usually comes from the west, hard Maple from the northeast

never wear gloves on a lathe or drill
True it's not a good idea. I cut the fingers off of a glove that I use on some turning. When turning dry wood the hot dust burns your hand.
