    I am literally SO thankful I found your website!! I've been adapting to using freshly milled flour since November. I've made some delicious things and I've made many solid bricks. 😅 Which always breaks my heart! It is so hard to find good info on how to use your own milled flour. Your first recipe I tried was the peppermint chocolate cinnamon rolls. My mind was blown even midway through at how light and airy the dough felt. Up til then, I had not seen that. Fast forward to when I made your pizza dough for the first time. Again, blown way! And I've been making our pizza dough for years. But hadn't gotten a good freshly milled crust yet. That one literally IS the best as the recipe says! Now I am loving your sandwich bread recipes since I make loaves weekly for our family. Your recipes helped me achieve the FIRST perfect windowpane test and it's all thanks to the tip of resting the dough before kneading. The dough is actually a delight to work with after resting and the bakes are so fluffy and gorgeous. I feel like I'm a successful baker again! I have shared your recipes with my friends who also mill their flour and they are super grateful also.
    I am going to try this recipe next. I've been on the hunt for an artisan bread recipe I could make with fresh flour and had yet to find one. This is exciting!

      You are welcome! Yes, I understand it can take awhile with some of these recipes. Also, for quicker recipes muffins, pancakes, waffles, pizza dough are all great options. I like to make double batches of cookies so I can have some cookie dough balls in the freezer anytime we want to bake a few. Thanks!

    So excited to find your recipe. 😍 It is almost identical to the version I have been making with all purpose or bread flour for the last year. My recipe has the addition of 2 TBS of honey and just a 1 hour initial rise time. It is such a simple, but amazing loaf.
    We just ordered a grain mill and it is such a relief to know that one of my easiest bread recipes will work with fresh milled grain. Also loving the idea of an overnight rise for convenience. That is actually better for our schedule. Thank you so much! Your recipe is going to be my first loaf when our mill arrives. 😊

I often will make my rolls and buns the night before, shape them, then put them in the fridge overnight, then bake in the morning so I have fresh bread and buns. Thanks so much!       This recipe was amazing! I have made it several times now and it is just as easy as my old recipe, but so much better with fresh milled wheat. 💗 Do you have any bread recipes you would suggest that would work with a kitchen aid stand mixer or could be kneaded fairly easily by hand? I would love to try more recipes, but the loss of KA mixers in the Facebook groups is a little bit intimidating. 😅

    I baked this yesterday, it took longer to bake than I thought but it turned out great. Today it wasn't quite as fresh but it was delicious toasted with blackberry jam. Planning on making turkey bacon paninis for lunch. Thanks, Kara!

    Very nice! Loved the crunch sound as you cut it.
    I have been making sourdough boules weekly for years and this year changed to fresh milled flour for it. Made traditional yeasted (bread pan) bread for decades but this is a nice compromise between the 2. Best of both worlds. Guessing it had a slight tangy taste due to proofing so long. Thanks!

      Thanks! Yes, I love how it is similar to sourdough, but for those who do not have a starter yet, or don't like a sour taste, this loaf is perfect for that! Also, I love having a variety of bread options to choose from! 😀

      ​@KS-ys8vu I was adding more flour than necessary. So I added more liquid (small amounts), and my bread is perfect now.

    Thanks so much. This looks great. I’d like to try your pumpernickel bread recipe from your blog. It looks really good. I’m going to add some raisin. I’d like to make a sourdough version and was wondering what kind of modifications I would need to make if any. Also I don’t have hard white wheat and wondered if hard red would work as well. Thanks for you assistance. Just getting started with all this bread making and your site is so helpful.

      Thank you! I love the pumpernickel bread! Also, you could try the cinnamon swirl bread with raisins, 😋. You could add the sourdough, and not the yeast, and do a 8-12 hour ferment. OR to just add a bit of flavor you could use the yeast, and just add about 1/2 cup of your sourdough starter, and proceed as the recipe is written. Hope that helps!

      Thank you! It should work with store bought flour, you just may need to increase the flour amount just a bit. Probably closer to 4-4.5 cups. Hope that helps!😀

    HELP QUESTION. How do i make plain white bread from fresh milled flour. I have both hard red and hard white berries.

    Can you tell me the biggest difference with hard red vs. hard white. I know soft white is supposed to be the closest to all purpose. I've mainly worked with ancient grains Kamut and Einkorn after being gluten free for 10+ years. I do use sourdough in my home baked and milled products. I'm curious about some of these other grains and appreciate any thoughts you have.
    Does your husband land work first then y'all travel or do y'all travel and find work once you're there?

      One more small remark. Two of the brands of my parchment paper are only rated to 425*F so I chose not to use it as I didn't want to eat silicone with my bread. You may want to check your paper as well. @@GrainsInSmallPlaces

      I use instant dry yeast I buy in bulk at Sam's Club, I believe it is Fleischman's. 😀

    What would happen if this recipe is baked in a regular loaf pan?

      It would make a lovely bread loaf! 😃 However, it would be a more dense bread like an artisan bread, not soft and spongy like my sandwich breads.

    How would you get a more open crumb?

      This is a yeast bread, so a more uniform crumb would be more likely for this recipe. But, if you were to make it with sourdough, it could produce a larger crumb. This can take years of mastering a particular recipe. Finding the perfect hydration and the perfect fermentation with your particular sourdough starter would be the key!
