You are right there are so many videos where the bowl of the mixer is absolutely full of flour. so it is nice to see someone just making one recipe and not doubling it or tripling it.
Yes, I think the maximum potential is shown often, but the single batch is not often mentioned. Yes, I will make bigger batches, but I don't always want to make bigger batches. I was happy to find that this mixer can do both wonderfully! Thanks for watching!
I haven't had a bread mistake yet that I couldn't coverup with gravy! 😋Looks Amazing. Can't wait to try. Thanks for all your hard work putting this video together.
Just found your site and blog Kara, loving all of it!! I want to try making everything!!! Lol Thanks for all the great recipes. I will be making your biscuit and sweet rolls over Christmas weekend. Really considering the cheese crackers this weekend too. Can't wait to try out more fresh milled grain recipes. I love how you give the measurements of the grains not just the milled flour, I am new to milling and always seem to end up with too much or too little. Lol. 😉
I made your focaccia bred recipe for a family reunion. First time making focaccia. It was a hit! I forgot to make it the night before, so it only cold fermented for about an hour. It was fabulous! Thank you!
Thank you for all you do. You are my go to when I'm finding a fmf recipe. After watching this I don't think I'm letting it get to the window pane. The issue I have is that the dough rides up the dough hook while kneading. I keep pushing it down. Do you have any advice?
I am so happy to be helpful! If it is riding up the dough hook, typically that means it is too dry, so try less flour, or adding a bit more water. Let me know how it goes! 😊
I've been debating about getting a mill for a while. Today, I ordered a NutriMill, with your discount code :0) after watching your video on mill pro/cons and others. I can't wait to get my wheat berries, also ordered, and get to baking... mistakes and all! Thanks so much for all of your work on these videos and sharing your experiences and knowledge!!
Yay! I am so excited for you! I don't think I could ever go back! Enjoy the journey, and allow time to learn. It's ok if the first bakes aren't perfect! We have all been there! You got this! Happy Baking!
This is funny. I just made your pizza dough recipe last night, possibly the same time you posted this. 😂 Making pizza for my grandbabies' birthday and planning to make your chocolate cake also. You do a great job teaching and I appreciate you.❤
It is a beast of a mixer! I love it! It is an investment for sure. But, I plan to have it for many years, and be able to pass it down to my kids in the future!
Love your videos!! Great detail! My Alexa set a timer when you did that in the video! So funny! I noticed a white bag in your kamut, is that for moisture mitigation? I’m new to wheat berries and wondered if i need to do that since they are in my pantry for long time as I use them.
Lol, thanks! I do use her timer often. But, sometimes she doesn't always listen to me! lol. I have moisture absorbers in them, because I travel to and from all over, and sometimes in super high humidity areas. It is just a precaution, because I am opening them all the time, and always in my bins! lol.
Does it make a difference if I use either winter or spring berries for the hard white? Have you used “white” kamut flour? Can I make this using sourdough? I recently purchased this mixer and I love it. I made 30 pounds of masa for tamales (in 3 batches) and it performed beautifully
As long as it is a hard wheat, spring and winter are pretty close, and mostly refer to the time they are planted. I only use fresh milled Kamut flour, I have not tried the kind already milled. You can use sourdough, and omit the yeast, add 1/2 cup sourdough starter to this, and still do the overnight ferment in the fridge. Then the next day, it may take double time to rise or more. Just watch for it to look puffy and doubled. Hope that helps! Yes, this mixer is a beast! It has done everything I have asked of it! Thanks, Enjoy yours! Happy Baking!
Most Fresh Milled Flour recipes require a wetter dough than you may be used to. I won't say it is impossible, but it would be a labor of love. If you have a bread machine you could try using that to knead the dough, it may take 2 kneading cycles. But, if you have to do it by hand, I would recommend you let it sit at the soaking stage for a bit longer, and try using oil on your hands and counter so it doesn't stick as badly. Also, I would recommend a bench scraper to use as well. Let me know how it turns out if you give it a try. Happy Baking!
This is my Ankarsrum mixer! I love it, here is the link if interested in looking up the specs. www.gopjn.com/t/8-12416-319338-206096?url=https%3A%2F%2Fpleasanthillgrain.com%2Fankarsrum-swedish-stand-mixer-heavy-duty-kitchen-mixer I also did a review video on it my first time ever using it. ua-cam.com/video/h-Ll6t1ob3c/v-deo.htmlsi=ZXM4e0rVZNmMQg7X
I used a 9x13 pan, but I only used half the dough. I saved the rest for pizzas later in the week. If you want a thicker Focaccia, you can use the whole batch in a 9x13 pan. Happy Baking!
So 2 questions please. I do not own a mixer so am I able to do this by hand and can I also substitute the Kamut with a different berrie? Thank you for the video and the demonstration getting the dough to where it should be
You can do this by hand, but it is a very sticky and wet dough, so it may be best to do the first steps and add everything together except the yeast, and let it sit covered for 2 hours (rather than the 15 minutes) Then, add the yeast, and start the kneading process. Knead it with oil on your hands and work surface, rather than flour. You can use all hard wheat if you don't have kamut , or use spelt in the place of kamut if you have that. I hope this helps!
Thank you for sending me to this video, it definitely helps! I now have another issue 😂 I have a kitchen aid, and I love it, but when I’m doing a small batch of anything, I’m having to stop it, scrape it down, and start it every minute until it’s done and it’s irritating. I love the pasta rollers though, so I’m torn as to if I should sell it and all of the attachments for one of these mixers. It looks like less of a hassle 😂
I still have my kitchen aid for the attachments, It is just not in my budget to get all the new attachments for this mixer. So, I just have both. Eventually, I will maybe upgrade. But, I love my pasta! And, the kitchen aid does a lovely job at it! But, for breads, especially fresh milled flour, the Ankarsrum mixer just blows it out of the water. I didn't believe it until I used it, lol. Here is my review video on it, and the first time I ever used it. If you want to see. ua-cam.com/video/h-Ll6t1ob3c/v-deo.htmlsi=vhWc1gvnPgp0oi5M
@@GrainsInSmallPlaces haha that’s the same position I’m in - the kitchen aid is mostly used for the pasta attachment in my house. I might just get a manual pasta roller, sell my kitchen aid and attachments in order to fund this mixer. All I have to do is convince my husband we need this other one instead 😂😂😂

I am three days in to fresh milling 😂. can I need this myself? I don’t have a machine.

If you don’t keep beer in your house you can add some malt powder to your dough to give your bread that flavor.
Yes, you can add malt powder to give a similar flavor. I mostly just use water, but the beer is a new flavor to the dough.
What size pan are you using?
I used a 9x13 pan, but I only used half the dough. I saved the rest for pizzas later in the week. If you want a thicker Focaccia, you can use the whole batch in a 9x13 pan. Happy Baking!
