Quick & Easy Moroccan Couscous (Vegan)

  • This delicious couscous is delicious, healthy and ridiculously easy to make. Use it as meal prep for the week, it stores really well in tupperwares :) Or use as a side dish for some more moroccan veggies!
    Ingredients:
    2 tablespoons extra virgin olive oil
    ½ red pepper (small dice)
    1/2 red onion (small dice)
    1 small courgette (small dice)
    1 tsp salt
    1 cup dried cous cous
    ¼ cup raisins
    1.25 cups of boiling water
    1 tsp ground cumin
    1 tsp ground coriander
    1/2 tsp ground cinnamon
    1 tsp turmeric
    1 tsp black pepper
    2 cloves garlic (grated)
    2 tbsp lemon juice
    1 tbsp extra virgin olive oil
    1 cup grated carrot
    1 cup canned chickpeas (rinsed and drained)
    1/2 cup of fresh coriander (chopped)
    1/2 cup fresh mint (chopped)
    1/2 cup fresh parsley (chopped)
    Pinch salt
    1/2 cup toasted flaked almonds
    1/2 cup pomegranate seeds
    Method:
    1 Scatter the red pepper, red onion and courgette on a baking tray. Drizzle with the olive oil and sprinkle over the salt. Bake for 20 minutes at 180℃
    2 Meanwhile, in a small bowl whisk the cumin, ground coriander, cinnamon, turmeric, black pepper, grated garlic, lemon juice and olive oil with the boiling water. Pour over the dried cous cous and raisins (in a large mixing bowl). Cover with clingfilm and leave to stand for 10 minutes. Once soaked and cooled slightly, fluff up the grains with a fork.
    3 Add the chickpeas, grated carrot and fresh herbs (reserving some herbs for garnish) and give everything a good stir.
    4 Scatter over the almonds, pomegranate and remaining herbs and serve.

    I just made this for lunch with a little adjustment to the amount of spices In accordance to my Indian pallete and used hot oil. I absolutely fell in love with this recipe it has so much variation and flavour in every bite and yet it doesn’t feel heavy at all it’s very light,fulfilling ,vibrant and very fragrant too. Thank you !

    I make this recipe too but instead of using raw spices...i saute them in oil n toss it in. For me it tastes better like that.

      @@ss2616 Cumin actually originated from eastern meditterranean countries, around Egypt and Syria and Cinnamon from sri lanka. Turmeric was used for many years in different cultures including China for medicine, though India started using it in cooking earliest. And yes black pepper originates from India. But most of your statements are just incorrect :/ You can love your own country without ignoring historical facts on a video about a different cultures beautiful food.

    This is the first time I've made couscous from scratch, I normally buy the ones in packets, just adding water, but this will be my go to couscous recipe. Love it, I added a few prunes and apricots and it was a great addition

    A-ma-zing! Adjusted the ingredient list a bit to my student budget and it is still by far the best meal I made since I have been living on my own. And that is for 2 years already! U guys make it so much fun to be on this plant-based adventure ;)

    I don't know how is that moroccan! It's just a mediterranian salad, i am moroccan and we don't put half thoses spices in the actual dish... so put : moroccan inspired

      @@lydiapetra1211 Hi Petra, you can easily find an authentic recipe just by searching for "Moroccan Couscous recipe". This is not it. The way you would identify a more authentic recipe is if there is a big plate with couscous covered with a sauce which has different vegetables and meat. That would be closer but this has nothing to do the way Moroccans make couscous and its frankly a little annoying how people just add "Moroccan" to it for views or just because they think its cool. Nothing about this recipe makes it Moroccan, not the couscous or the raisins or the almonds. It does look lovely though, and probably tastes great too, its just not Moroccan.

    Wow! Made this and it was amazing! But i stir fry the spices first and added diced tomatoes and cucumbers as well. Ate it with baked lamb as the main course and added greek yogurt and a slice of lemon as a side.

    Thanks for the recipe... however it was bland. I would reccomend adding more garlic and ABSOLUTELY adding salt to the spice blend before the cous cous. Someone suggested frying the spices first which is what i will do next time. The duration and time recommendded for the roast veg was not long enough or hot enough, plus the seasoning was bland. I think grilling them would be tastier. Adding the lemon afterwards too is essential.

      It did get cooked using the absorb method. Boiling water was added then the bowl was covered and left to sit for 10 mins = cooked.

    Lessen the use of plastics and just cover with a pot lid or plate. Skip on the oil too.

      Couscous is mostly made from Morocco and Algeria but altogether it’s North African including Morocco,Algeria,Tunisia

    I made this yesterday and instead of using chickpeas i threw the fucking dish out the window because that is not moroccan in the slightest. Just call it couscous, not Moroccan.

    And here am I, thinking that only Italians need anger management because of other countries, especially America, performing a masacre on their traditional dishes, but I think this one is even worse for the Moroccans. This is in no way shape or form Moroccan couscous, it is like making spaghetti by mixing instant noodles with heinz tomato ketchup and calling it traditional Italian Spaghetti. Just stop it

    Unfortunately, it has nothing to do with Moroccan couscous. No soy sauce, no corn, no lime leaves, no olives, no eggs, no lettuce, and certainly no Asian ingredients. Please don't call it Moroccan couscous. I'm sure what you cooked isn't that bad, but it's 100% not Moroccan. The appropriate ingredients consist of 7 types of vegetables (pumpkin, zucchini, radish or kohlrabi, carrots, onions, chickpeas and sometimes cabbage. Because of the children they also like to add potatoes or sweet potatoes. Caramelized onions with raisins as a topping. The vegetables are very tasty cut large pieces, quartered or halved, never into very small pieces otherwise they will be mushy. The couscous is steamed over the stew. If you really want to learn how we make traditional couscous, you can find many recipes on youtoub. Please search traditional Moroccan couscous, not an imitation.
