My house is very old and only has two cables, one red and one black. My fan works very slowly. I don’t know how to do the wiring

As those are not standard wire colors (typical is white and black wires), please call a licensed electrician to ensure that the wiring is connected correctly.

The light for this fan is rated at 3000K (softwhite) and is not adjustable.

If I have no existing hole what size do I need to cut in ceiling

That really depends on the outlet box you are installing. in general, the hole will be about 3.5-4 inches.
