    I assume you can use frozen strawberries, right? Would I thaw them before hand? I love the flavor of strawberries so much that I actually bought Amoretti wild strawberry extract. An extract which has an exorbitant flavor and price… around $40, for 2 fl oz!

      Yes, you can use frozen for the purée. Just make sure they’re completely thawed first so they don’t seep and separate your buttercream

      Abigail Vaughan I did used have a problem with those air bubbles and it not looking as smooth but then I switched to the paddle attachment and low speed at the end and that helps get those air bubbles out for a smoother buttercream.

      Yes, macaron’s can be filled with a variety of different fillings depending on the flavor you’re going for. This buttercream recipe would definitely work as a macaron filling.

      I know they call “confectioners sugar” different things depending on where you live. We always called it “powder sugar” growing up. Is that what you mean by “icing sugar” or is it something else entirely?

    How much frosting would this make? Im looking to make this for 2 number cakes that are double layered

      Marileah Niddrie I can frost 2 dozen cupcakes with this recipe. Depending on the size of the number cakes, and how you frost them, you may want a triple batch.

    How many strawberries did you use to puree and is it just strawberries or did you add other things to the puree?

      It’s just 1/4 cup of puréed strawberries with nothing else added. So however many strawberries that it takes to give you 1/4 cup of purée. I would blend about 8 oz and see if that gives you 1/4 cup of strawberry purée.

      @@maryamabualainain8264 probably about 15 strawberries. It really just depends on the size of the strawberries but I just make sure that once it’s puréed that I pour it into a 1/4 cup so that I’m only adding 1/4 cup of puréed strawberries

      Yes, just bring it back to room temperature and mix on low with your paddle attachment.

    if I can’t find strawberry extract what can I use?

      If I couldn’t find strawberry extract but still wanted to add more strawberry flavor to it, I would try and find strawberry emulsion or freeze dried strawberries. If you use freeze dried strawberries, you’d first put them in the blender and blend them and add about a fourth a cup to the buttercream and a couple tablespoons of milk.
