    This is an even better version of potato chips. They fry better. They taste better. Just slightly acidic and mildly salted all the way through. It is basically the same recipe as regular potato chips. The only difference is that they are fermented before cooking. Basically like homemade saukraut is made

    I like to add garlic, onions and rosemary to the ferment, then use them baked atop a layer of red lentil flatbread or any batter bread, yum!

    I wonder how much sugar the potatoes would have in them after this, or would it be all eaten it all up?

    Deep fry in pastured beef fat or Bellota lard to make it healthy.

    OMG is this the recipe for vinegar potato chips!!! I have tasted them when I was traveling they were sooo good but I was never able to find them again wher I live

    This also works great for home fries or French fries. If you have sauerkraut or oil and vinegar coleslaw that’s a decent starter as well. I like to do mine overnight. No salt needed that way. It doesn’t hurt to have some pink brine salt around either.

    This is the first time I have seen fermented potatoes! That is boston lettuce you put between. Can you put cabbage leaves as cabbage always ferments well. If the potatoes are fermented can you eat them as is and if so what does it taste like. This is really interesting, the potatoes must have a nice unique taste to them, I think I will try this out, I usually stay away from greasy and deep fried foods as my stomach does not handle greasy foods well.

    I am starting on fermenting but I think I would just go to the store and get some salt and vinegar chips. Bet they are amazing tho. Thanks for video.

      True. The fermentation is only used for flavor and texture in this recipe. Sometimes that is enough. I eat plenty of other ferment daily.

      I believe he did that in order to push the potatoes down, as the bubbles in the glass would have pushed them upwards, thus exposing the potatoes to oxygen.

      I have not seen any other recipe for fermented potato chips. But I have seen for fermented french fries, so it was not a huge leap in imagination.

    Deep frying them kills both the healthy lacto bacillus you so carefully added during the week of fermentation, as well as add a load of oil which is not a food. Bummer.
