The candy isn't just for fun. They aren't thirst provoking which matters in an emergency where safe water may be unavailable. It provides rapid glucose and is lightweight, durable and extremely portable with an almost unlimited shelf life.
When something is vacuum sealed like most of those foods then it can stay fresh for a very long time! Many of them most likely have salt and preservatives as well but it's mostly the sterile packing :)
What is the shelf life of the instant carbonara? I love that instant/emergency food, that make use of room temperature water, was included in this video.
