The reason they aren’t washed is because they’re seasoned, but the pans are NEVER supposed to be that nasty.

A good layer of seasoning should handle being washed. If the coating is too weak to hold, then it all needs to come off, and the item needs to restart the seasoning process.

As someone who worked at like 4 Pizza places (none were chains) I can tell you, screens don't stay silver long, BUT the one she had was pretty bad. You dont have to clean them as often because of the almost constant burning, but they shouldn't get so bad you can't see through them lol
The fact that she went on this journey to just throw it away, and even funnier is the fact that several people watched this whole journey, and I watched a recap of it.

I know she was being absolutely ridiculous, she only did it for the attention. That's the only reason she did it, and I don't think she was offended, like she was trying to act like it's not that deep, but some people just crave attention, and she got it. She got exactly what she wanted.

Her tiktoks were more her being funny about it and being confused than her being a Karen. She was just following her comments suggestions. Being a Karen is way more unreasonable and demanding of others. Also that pan should’ve been thrown out if it just needed to be seasoned. Being burnt up is fine but having it caked on like that seems like an oversight.

I thought it was seriously gross when I first started the video, but I remembered that you “season” cast iron pans. After the explanation that it’s pretty much the same thing, I literally said out loud “that makes sense”. As long as the bottom of your actual 🍕 or 🥖 isn’t burnt, it’s fine. They showed how the extreme heat of the pizza ovens does take care of germs/bacteria. I’m very satisfied with the conclusion.

I worked in a Pizza place and we only used the screens to make chips from the dough. We also made pan pizzas using butter so it doesn't stick to the pan that we use. After we just wiped it clean after. I would run my hands in the pan to make sure there is no left over foods everytime nothing.
Not all pizza places uses these screens. Especially local small pizza joints. They use flour to cook their pizza.
I've worked at 3 Domino's locations; they're like this too. But there's a difference between seasoned metal and caked-on food chunks.

A mapgas plumbers hand torch purchased at any hardware store for 40$ including the gas would have got this to a brand new state in about 2 minutes. When the steel is red hot the carbon buildup crumbles off because it's too hot to stick and the metal expands. In the time it took to watch this video, 6 screens of this condition could have been restored to store bought finish.

I can also confirm this is how we clean our screens of carbon buildup. Our kitchen has a rulebook for deep cleaning and the grill/screen section has a highlighted quote on how to get them shiny clean again: "Red hot=Store bought"

This is unrelated to the video but I just need to say how much I appreciate the fact you caption your videos and it’s done so well, thank you for the effort and time you put in to make it accessible!
The fact that she had to go through so much to clean the screen is probably a good indication of why Papa John's doesn't wash them on a regular basis. They probably don't have time to wash them on a regular basis.
Plus, if we did, we would have to run them in the oven about ten times to season them. Each run was about 6-7 mins, and had to wait for them to cool off before running again. New screen day was usually on Monday, or Tuesday.

I worked at Domino's Pizza, and they didn't clean their pans. Ever. I would watch people put fresh dough into the cold, dirty pans. I was asked to move the hot ones so they could get the colder ones. I was 14 at the time

The word Karen is when someone takes a small and easily solvable solution and makes it into a huge deal, which includes yelling, complaining, asking for a person with a certain level of power, control or authority of a place or area, and misinformation. She never did either of the things listed, she never complained, maybe yelled but was understandable for the situation of spending several days trying to clean one single object and didnt provide any misinformation as what she said was true the pan was disgusting, greasy, and hasn't been clean in a good period of time.

She isn't a Karen. I work in grocery retail. I know a Karen when I see one. Ayla just expressed her concern over receiving a pizza screen accidentally placed under her pizza. Nothing Karen about showing concern for herself and other pizza lovers.

People throw "karen" around like it's candy. It makes it less meaningful. There are actually people who go into chain stores and abuse or harass the employees for not being able to make magic happen...

I worked at Papa John's around 2010-2012. We never cleaned the pans. The customers also aren't supposed to get the pan lol.
We just threw away the pans once they got too bad. Bad being worse than the pan she got.
I worked at a pizza place. We cleaned our pans at the end of the night with a clean brush to knock off food. The pans get grease baked onto them and as you see it is nearly impossible to get it off. The pans have holes in them to let the heat through and it bakes the crust quickly and crispy. They are run through extremely hot ovens and are perfectly fine.
My parents always told me that no matter how "clean" fast food restaurants are they are never actually clean

I don't know it really depends on where you go. I've worked in the food service industry for 6 years and the CLEANEST kitchen I've ever seen was when I worked at Raising Canes. Granted that was my only fast food job, but no restaurant I've ever worked at has been that clean

@Kitty R I would rather see that and know that I’m getting dirty pizza then continuing to eat it. Usually a customer doesn’t even have that type of power to even atleast tell the Store that what they are doing is wrong they would usually ignore them because they get customers just about every day.

That's so weird because I worked at a pizza place for a few years, and we always kept our trays/pans clean.
I worked at Domino's, it's the same basic story there. If a screen hits the floor it goes back to get sanitized. Occasionally, we had this big tub of acid that things (deep dish pans that DO get washed regularly, baking screens, ect.) got soaked in for a while. The black stuff came off in that and was silver again.
Hi! I bake. This stuff on the pan is oil that’s been cooked into the pan. Aged pans cook a more crisped dough. This isn’t gunk, we do wash these, but the layer of stuff is actually very good for the bake of the bread, so there’s a process most bakers will do to get this. We will layer the pan with oil, bake it for an hour and repeat until we get the desired color. Soap and water will not get it off, but you’re not supposed to scour it. It’s very similar to a cast iron. Almost everywhere you order anything that’s been baked- cookies, bread, pizza, all of it, if it’s good was baked on one of these.

I don’t think this person was a “Karen”, I believe she was just concerned about Papa John’s cleaning standards. Not sanitizing your pots, pans, or any type of cooking equipment (especially the kitchen), is a health violation. That’s gross.

*Side Note*
I get that sanitizing and seasoning are two different things. The cleaning of the pizza screen requires different sanitization methods than that of other cookware. For example, cast iron. Cast iron requires rinsing with water (I happen to own a cast iron skillet and I’ve seen my mother clean it) and then seasoning it with olive oil. Pizza screens I would believe require a deep scrub since you wouldn’t want all of that bacteria and gunk on your food.
Papa johns isn’t the only one. I worked at several other places and just regular trays have the black/brown carbon on them. These trays were used to cook biscuits. We were washed, sanitize and air dry but the carbon would not come off. When they got in bad condition we replaced them.
I worked in a smaller scale chain restaraunt and cleaned the Pizza pans/screens, etc. every day after closing, sometimes it's hard but I got them clean. Another restaraunt in the same chain needed a dishwasher on short notice so my boss drove me over there to help out, at the end of the shift I went to get the pizza pans and the screens were black, crusted and had stuff embedded in the screens so they weren't even screens anymore, I started soaking them while I cleaned the kitchen and the manager, my usual boss' cousin, told me they never wash those 'because it ruins them', they believed the black crust building on them was perfectly normal and okay.
Both the same local chain, owned by the same family, but very different ideas about how things are done.

Not this guy, I've worked at a pizza place's before (Pizza hut is the worse), honestly It looks really gross when it's wet, but other than that it's been heated and burned so many times it's just germless carbon mass (and if you ask me it's not really gross unless it contains microbial organisms. Like Snot vs soap one of them is gross )
Yeah if you didn't know about science or cooking techniques people may think that... most people don't know anything worth while about either of those topics though 🤣 reality of cooking science isn't usually pretty to those with closed off or strictly modern sensibilities.
Logistically though for best cooking result the holes in the pan SHOULD be clear 😜

The easiest way to clean the grid when it is that bad would be to use a 4 inch angle grinder with a wire brush (stainless) on it(rub lightly) . Then rinse, add a little veg oil and put through a heating cycle. It will fix all the loose carbon as the oil turns to varnish then carbon.

Most pizza places do it. They are burned on purpose so pizzas do not stick to the pan. They go in a 400-500 degree oven that sanitizes it. 🙄

@@CatPawLover that has nothing to do with the process. You can season stainless steel pans the same way, it's just not common since they're usually non-stick and rust resistant already. "Seasoning," cooks the oil into the pan itself creating a carbon polymerization. It bonds with the metal and helps prevent food from sticking. Some people choose to season their stainless steel pans too since the teflon coating can become eroded over time. Cast iron was just used as the example in this post, because it's the most common pan people do this to.

I work at a local pizza place and ours have never been that bad, they are still mostly silver but I think it’s due to my work running them thru the dishwasher after each use
I worked at little Caesars they did wash the pans, but it will still burn they should of replaced it once in a while and we bake the pizza and serve it to customers I was grossed out. It is what it is. I don’t have the power the higher ones of the power

Everyone should learn how to cook, it's an essential skill. Cast iron skillet isn't an essential tool in cooking, but it's a very common one.
The screen is kinda like similar to wok.
If your wok is silver, it indicates it's new and unseasoned.
You know if the wok is seasoned if it looks burnt.
Why they needed to be seasoned?
Well to add more flavor and prevent from sticking.
This is very common in Asia especially the usage of wok when cooking fried rice.

pizza pans should not be cleaned, they get seasoned just like a cast iron and are meant to be kept that way. it allows for a non stick surface to form and allow the pizza to come off the pan. it also in my experience effects the flavor of the dough. And my source for this info is i was a supervisor for a Whole foods market prep foods.

Not sure about pizza screens but it is my understand that when things like pizza pans and iron skillets will build up a layer of oil as it polymerizes and then the pan becomes "seasoned". Again not sure if it is the same for pizza screens but it could work the same manner offer that non stick surface built up over time.

Exactly! Like, I go to a pizza place which is just like Subway, where they make it in front of you, and you say what you want, and they use the exact same thing, but they are ALWAYS clean, and they are always fine, so I don't get why they can't keep it clean enough to let the holes shine through...
same thing with pizza hut when i worked there for a month, we had those black screens and just barely washed them thru the dish machine and call it good, they cannot be silver, if you really think about it, they cook 100s of pizzas prob everyday and or week, keeping it silver and perfect would be asking too much of workers honestly,
It goes thru the oven at 450-490 degree oven they purposely dont do clean that often to season and they do clean em by spraying them with degreaser let it sit half a day and do throw out old ones

I feel like videos like this go around once a year or so.
We wash them where I've worked, a couple places. The "gunk" is carbonized material, and that restaurant literally must not have been cleaning it, because it's kinda hard to cover the holes in those. There's always going to be black carbonized material on them even after washing them and scrubbing.
The acid bath is for our heavier pans, but dishwashers and drivers seldom have that much time, equipment, or chemicals in-store to clean the rally heavy pans - at least those I've worked at. Screens are a little different but the same concepts apply - the franchise or owners (or whoever) are supposed to come by and clean them "all the way" after sometime, but you don't wash each one after each use, because they are run through the oven constantly - after a little while they do need a cleaning meant specifically for them - at least, the heavier pans do. Screens? Not sure what the method for those is to be honest, but I assume it's similar - or replacement.
Even semi-regular cleaning doesn't get the buildup those do, but they aren't ever going to look shiny like a new one. It lasts a couple weeks even when regularly washed, just saying - don't expect to see silver pizza screen. It's not just impractical, no pizza place is built to regularly clean off all carbonized matter and it can take a very long time, and dangerous materials. You do not want some of those stores having anything of the sort.
As far as just "not washing" them? if it's a screen, you can go for a while if it's not greasy. If it's a pan, it's going to be greasy and you should be washing those every time they get greasy.
so basically the pans are supposed to be black, but aylas was just plain right dirty, couldnt even see the holes.

It stays on there. The freeze will go to a golden yellow and get real sticky. That’s the only time you’ll be able to get it off. It’ll be really easy on the hard chunks of golden sticky honey looking stuff; it’ll come off but you need degreaser and a good scraper + elbow grease. But once the pan is black, it starts beating becoming part of the metal.
use a hot & open flame to clean something like that. it literally burns the stuff off and the grime is easy to wash away :)

Hello am a practice doctor here some few tip's if you get the same thing in food
1.if a food has some weird taste or look dont eat it i can make you sick or much worse when it come to food.
2.if some how eat one and didnt know it fast if you felt your body is not good you can go to the doctor or rest for 1 day if you felt the same pain go the doctor.
3.always make sure your pan or kitchen item that is use for cooking 100% clean some can be miss so always check 3 time to be sure

Ikr. I work as a dishwasher at a bbq place where they slow cook all the meat and the grills get absolutely filthy and covered in oil but we still clean them every week. The pan in that state was deplorable.

My aunt had a pizza place and those were not supposed to be washed.
Sometimes we actually it is intentional to make those oil layers so that it is nicely seasoned.
Just think of it as a nicely seasoned wok or cast iron pan.
I would prefer those than any pan that are cleaned by chemicals.
The odd thing is I have never seen metal screens used during pizza delivery, which we have never used delivery now for decades. Normally the one's I have experienced are just round corrugated cardboard under the pizza. That naturally recycles faster than metal does, should that cardboard get dumped in the landfill or anywhere on the ground. Or thrown away at the recycler.

I worked in the bakery and our bread pans (deli bread, fench/Italian bread, dinner rolls, etc) would look like that but we were told to not clean them because it's all "seasoning" from the cooking spray we apply to the trays and pans
As a former papa John's employee I can verify that we never washed these pans. The black gunk is simply grease, corn meal, and dough cooked in the pan over and over.
Also the quality hasn't changed since John stepped down as ceo. This practice of not washing these pans were a thing back in 2011 when I worked there.

As a wife of a papa john’s manager myself, they don’t wash those pans at all, and neither do they at Pizza Hut or dominos either. My husband has worked at all 3 pizza chains and they don’t wash their pans.. this is completely true. The way they “ clean “ pans is to run them through the oven conveyer belt one more time around, that is only if food is still stuck to it, otherwise it goes back up on a shelf to cool off or immiedietly is used for another pizza to be made on, etc etc, when wings are cooked they place a parchment paper over the pans, and something a lot of people don’t know or understand, a pizza nor bread sticks or cheese ticks actually “stick” to these pans, between the build of “gunk” and the heat of the oven, the dough actually rises and essentially doesn’t touch the pan the entire time it goes through the oven
