Manufacturers won't invest in building such cars to homologate them for the series. It's just too expensive. We are very fortunate that Toyota build the GR Yaris, which is as close as we are going to get, sadly. I'm with you about wanting road-going versions of the cars we see competing, but the FIA needs to look at how to reduce costs, not increase them.
