SeaRey owner here.... nice plane! Couple things...no windows to fly while open, canopy opens against water pressure while upside down, ( should you flip ) gear switch out of sight, nose wheel not good for rough fields.... on the plus side, no flying wires, folding wings, anti flip design, water rudder. After looking at SeaMax and others I bought the American made SeaMax LSA.
I am right-handed and fly from both seats. It doesn't take long to get used to either seat. And if you feel more comfortable having your left hand on the stick you can fly from the right seat, no problem. Just make sure you ask for an extra flap switch on the right side of the airplane.
You can fly from either seat with either hand. I'm an Airbus (retired) check airman). You can easily fly with either hand. I also have a Compair 6 and can fly with either hand on the stick from L or R seat. Easy as pie. Takes about 5 minutes to master it.

Nice airplane! Is there the possibility of adding a ballistic chute and does that allow an increase in MTOW?

I do not like this canopy at all. very bad design, looks good , but in real life is a death trap. Should go for a searey design
