    ---For the marinating beef
    * Beef, 85 g
    * Ginger slices, 3 g
    * Potato starch, 1/2 tsp
    * Light soy sauce, 1 tbsp
    * Baking soda, 1 tsp
    ---For the congee
    * Rice, 40 g
    * Water, 1 L
    * Salt, 1 tsp
    * Light soy sauce, 1 tbsp
    * Chopped scallions, 1/2 tsp
    --- How to make congee base
    1. Add water, washed rice to a casserole, bring to a boil over high heat, then turn to low heat, boiling for 40 minutes, turn off the heat.
    ---How to make beef congee
    1. Add hot water to a pot, bring to a boil, blanch the marinated beef.
    2. Add blanched beef, salt, ginger shredded to the congee base, boiling until the beef is cooked through, about 5 minutes, turn off the heat. Top with chopped scallions.
