Oh that's one of the advices I loved the most from her, about "what can you add to make it rich in nutrients/healthier" like in cereal, you can add some fruit, and almonds, things like that, or an instant ramen, chop some veggies and toss them into the soup, things like that are great

Yeah! I’m super sick. I’ve struggled with being underweight for over 20 years (since childhood) because of a genetic condition that affects pretty much every aspect of eating & digestion and her videos helped me avoid needing things TPN and tube feeds when my illness suddenly got a lot worse. I will still probably have to eventually go on assisted feeding. But the longer I can hold off of it the happier I am and I’m really grateful. I also love that her videos are so simple I don’t feel guilty about asking my carers to help me make it or even make it for me. I wouldn’t want to ask them to do some kind of complicated 1 hour long process to make me tiny bits of food (I have to eat like a bird - tiny meals all day long) I can even do some of her recipes by myself which makes me feel so much more accomplished. I love her and I wish more ‘healthfluencers’ where like her- creating genuinely simple meals that can be modified for your health needs. If you want an fluffy, thick omelet, start by mixing eggs with a splash of milk. Mix well, but dont beat yet. Then let it set while you prepare any ingredients you may want in it. The longer it sets, the more effecting the beating process will be. So feel free to fry up bacon, ham, onions, wor whatever you wish to have in it, but make sure to drain it before adding the eggs, leaving only enough oil to wet the pan. after a few minutes, give the eggs a good beating, getting as much air mixed in as possible, then let it sit until you are ready to pour the eggs into the pan with the rest of the ingredients. Then turn the heat to low and give the eggs 1 last beating while the pan cools. Then pour the eggs in, covering the entire bottom of the pan and add cheese if desired. Let it cook on low unto only a thin layer of wet egg remains on the top, then fold and turn the heat up to medium and give both sides a nice golden brown coloring. If you flip it more than once, you did it wrong. Same rule as burgers. Once its done, season to taste and enjoy. If you did it right, its texture should be almost cake like

Makes sense as a street/snack food. Fried Egg is good on its own but requires a plate and utensils since it's so soft so the rice paper gives you a wrap for it.

In my country, it is called "martabak telor" and that kind of shape is usually street food that is often bought by children. If the shape is rectangular and thick, it is usually sold at a higher price.

That is actually one of the best treat we can ever get after school in Vietnam. If you can find dried seasoned baby shrimp or minced pork and put them on top with a bit more seasoning. It’s even better. Leave it on the stove a bit longer as well for the crunch. And there you go, a crunchy rice paper omelette 😉 (or bánh tráng nướng in Vietnam)

I remember when I was little in the early 80s my uncle came back from his world travels in the Marines with a whole collection of various kewpies with girls names written on them. This is a Vietnamese street food called Banh trang nuong. There are so many variations. Definitely a quick snack to make however they usually grill it over charcoal. Love it.

Like not eating at all isn’t hard because honestly I’m used to being hungry more often than not (I starved myself for alms it 7 years, but it got really bad during covid and I had to seek professional help) eating ice cream or “junk food” made me feel so guilty I would spiral downwards because it would make me feel like I gained weight even if I was still at a calorie deficit. I’m not saying her videos aren’t for people who don’t struggle with this, but they have been super useful for me.

Yeah! I’m super sick. I’ve struggled with being underweight for over 20 years (since childhood) because of a genetic condition that affects pretty much every aspect of eating & digestion and her videos helped me avoid needing things TPN and tube feeds when my illness suddenly got a lot worse. I will still probably have to eventually go on assisted feeding. But the longer I can hold off of it the happier I am and I’m really grateful.
I also love that her videos are so simple I don’t feel guilty about asking my carers to help me make it or even make it for me. I wouldn’t want to ask them to do some kind of complicated 1 hour long process to make me tiny bits of food (I have to eat like a bird - tiny meals all day long) I can even do some of her recipes by myself which makes me feel so much more accomplished. I love her and I wish more ‘healthfluencers’ where like her- creating genuinely simple meals that can be modified for your health needs. So many of them try to sell you miracle cures or completely ignore the fact that sick ppl are (often) disabled and can’t do things like normal ppl...

If you want an fluffy, thick omelet, start by mixing eggs with a splash of milk. Mix well, but dont beat yet. Then let it set while you prepare any ingredients you may want in it. The longer it sets, the more effecting the beating process will be. So feel free to fry up bacon, ham, onions, wor whatever you wish to have in it, but make sure to drain it before adding the eggs, leaving only enough oil to wet the pan. after a few minutes, give the eggs a good beating, getting as much air mixed in as possible, then let it sit until you are ready to pour the eggs into the pan with the rest of the ingredients. Then turn the heat to low and give the eggs 1 last beating while the pan cools. Then pour the eggs in, covering the entire bottom of the pan and add cheese if desired. Let it cook on low unto only a thin layer of wet egg remains on the top, then fold and turn the heat up to medium and give both sides a nice golden brown coloring. If you flip it more than once, you did it wrong. Same rule as burgers. Once its done, season to taste and enjoy. If you did it right, its texture should be almost cake like

This small pizza is a suuuuper popular snack to us Vietnamese. We call it bánh tráng nướng (grilled rice paper). You can try add some sliced sausage. If you visit Viet Nam, I highly recommend trying this in Đà Lạt city, so yummyyyyy

Makes sense as a street/snack food. Fried Egg is good on its own but requires a plate and utensils since it's so soft so the rice paper gives you a wrap for it.
@@CaptainApathetic well actually, we love bánh tráng nướng for its crispiness which comes from the rice paper being grilled. It tastes better in combination with eggs, along with toppings (green onion, sliced saussage, jambon, mayo, hot sauce) add flavor to it. But that kinda makes sense tho 😂

That is actually one of the best treat we can ever get after school in Vietnam.
If you can find dried seasoned baby shrimp or minced pork and put them on top with a bit more seasoning. It’s even better. Leave it on the stove a bit longer as well for the crunch. And there you go, a crunchy rice paper omelette 😉 (or bánh tráng nướng in Vietnam)

Kewpies were actually from circa 1900, and I think they were supposed to be angel babies before they were born. Early in the 20th century dolls were made and they continued to be popular throughout the 20th century, with children and they also became popular with adults to give them to someone you're sweet on, especially in parts of Asia. I remember when I was little in the early 80s my uncle came back from his world travels in the Marines with a whole collection of various kewpies with girls names written on them. He gave them to me and my sister, we loved them so much!

This is a Vietnamese street food called Banh trang nuong. There are so many variations. Definitely a quick snack to make however they usually grill it over charcoal. Love it.

We called it "Bánh tráng nướng" in Vietnam and was orginated from Phan Rang (Ninh Thuận).This is more like a snack for Vietnamese. We also add in some dry shrimps, cheese, sausages, etc.
That makes sense now because I was like “no way that is going to keep me going till lunch” but it seems fitting for a snack
