Make sure you select the RGB swatches

Just for reference, I think you deleted your RGB swatches, and then restored CMYK swatches.... instead of print, choose RGB

I tried to select the swatches from the default menu, and then drag to the fill in properties; but fill disappears as soon as I click in the swatches box. Any suggestions?

You need to select it to affect it
Always make sure that you select what you want to change before you do any parameter changes or property changes

It should work if you right click on the menu and select save swatches

That is strange behavior, I recommend resetting your preference file in Illustrator. Here is a link from Adobe showing how to reset the preferences
