    “Ain’t never seen a bug 🐛 with an overcoat 🧥on”… lol that snow was pretty.even has warm as it is today, I could sit down and eat me a bowl of greens. I use to cook them and in winter I’d freeze in quarts after I cooked them. Id take out in summer sometimes if I was making fried fish or chicken or something. They froze well, tasted like you just cooked them. So good for you! That is good your girls seem to eat food from garden. My kids ate whatever I cooked. So many don’t do that anymore… chicken nuggets n hot dogs etc have a place and are fun and good. Makes it a treat when they do have them, but not everyday.

    My mom always raised kale and I like it. Was in SE Kentucky once and the lady I was visiting made a mixture of greens just like you did. It was delicious. Made a pint of those pickles today, all the cucumbers I had. Heard it ping! So easy, hope to make a few more.

    Finishing the greens in the pan with the drippings was a real eye opener. Never seen that method before. Looked and sounded good!

    I knew a guy many years ago who grew what he called "winter greens". He brought a bunch to work and cooked them up to share with us. They was the best greens I ever ate! They was not tough at all and about eight times better than spinach and I love spinach! I asked him how to cook them and he said "boil them with a little white vinegar". I never tried it because I knew there had to be a big secret to anything that good. I'm going to try and plant some mustard greens this year and I'll try your method. It looked really good!

      @@metcalfmills5679 I always figured that he called them "winter greens" because he grew them in the winter. It was January when he brought many paper sacks full of these greens to work. They was large leaf like yours but it was a long time ago. I never had any greens as good since.

    Oh my! Be still my heart. I can smell that fresh hot cake of cornbread just waiting on a big slab of unsalted butter. I can also smell those mustard greens perfected by that pickle juice. Everything on that plate makes my senses soar. All you need is a little green onion, and a little Redmond's salt, and some fresh cracked pepper. Lordy! Lordy! I'm hungry now!❤❤❤😊

    I use a portion of country ham or streaked meat instead of pouring salt 🧂 and i also add sugar to make the pot liquor that much gooder soaked into my cornbread, I loved this video!

    The video was titled 'Cooking Mustard Greens', but the star of the show was the streaky pork! Many all you needed with this was a big glass of butter milk. I have never tried pickle juice on mustard greens, but man I sure like a little Tabasco on them. Thanks for sharing, God bless.

    I went back and watched this video cause one of your other videos you talked about liking mustard greens. You cook them just like I do my collards. My mom taught me also. That there is a fine meal no doubt. Take care

    May I come eat supper with you. It has been so long since I had fresh mustard greens. Mom and I used to pick them and cook them. Just exactly like you did. I always take the stems out of collards and other greens, but people here in the south don't usually do that. Your girls are so blessed to have a daddy like you that cooks good food for them. Ok dill pickle juice is a new one on me for greens. I have used it on beans.

    You always manage to make me chuckle. You have a very dry sense of humor. I've never had mustard greens. I wouldn't eat collard green if you paid me, lol, and I always assumed mustard greens would be the same.

    The smell almost got here. Made me hungry. I like the hot pepper vinegar on top of greens. But I'll send you some chow chow for a side. It would go great with everything. Yum now it's time to go hunt something to eat. Thanks Mrs Metcalf you sure taught Justin well

    I almost felt guilty as I sit here eating my cornbread and and milk while watching this video. But just almost. LOL I have to agree with you Justin about the pickle juice. Its one of the most overlooked things in the pantry. I even mix it with a little olive oil and pour it over a fresh garden salid. Why use vinegar when a spicy substitute is available and just going to be thrown away otherwise.

    Poor starving kid, oh the anticipation with the smell of all that cookin !!! You are a great daddy 🥰
    When I was a kid back in Oklahoma my mom had a glass bottle with peppers and I think vinegar in it, it had a black cap that had a hole in the top, it sat in the door shelf of our avocado green fridge, I would sprinkle that juice on any greens she cooked, I loved it !!! Man O Man, I wish I knew what that stuff was 🤷🏼‍♀️
    I have a whole bunch of different peppers out in my garden to pick in the next day or two, I think I’m going to stuff some in a bottle and cover with vinegar and see if it’s similar !
    Now why didn’t I grow mustard greens this year 😏 I’ll have to try it with kale !

    I picked wild mustard greens and cooked them and they are a wonderful flavor. I also dug some wild ones from a friend’s yard, planted them in my garden and then harvested the seeds when they were ready. Just from a very small patch I ended up with a pint of seeds!

    Now I see where I've gone wrong trying to fix a pot of greens. Can you cook your food dyslexic-ly? I think that's what I did, in backwards jumbled up order. My mom never fixed greens and I didn't have folks around to learn from, so I tried to figure it out from books and googling recipes. But it never tasted like what our neighbor made. I bet it's because she cooked it like you. Guess I'll be hunting the garden trying to find enough greens left to give cooking them one more try, in the right order. That supper looked delicious! As far as I’m concerned, you are a Michelin 4 star chef because I am willing to bet that all tasted as good as it looked! I’m so glad you have your smell and taste back and could enjoy it!!       That may be it Lea! Oh I’m just a ol mountain cook that likes to eat his own food, but thank you for the kind compliment 😁. Yeah I am glad we can taste better and smell now, I missed it. And I went back for seconds…and thirds.
      Yep we played out in it today. It was so dry and powdery it would not pack together for a snowman. We did make one about a foot tall though. Thank you Lea, hope you all are well!

    I've done that with the salt and apple cider vinegar and just let them soak in cool water for about 5 minutes. The only thing I've changed is using Himalayan pink salt now, instead of iodized salt. Of course that was because they come from the store. Once I can get the garden going, it might be different. Looks good.

    My fravorite Greens in the summertime are Stinging Nettles cooked down. You might want to use some gloves to pick and handle them.. I just put them in a cast iron skillet and stur and fry them down. Boy,oh boy are they good.

    I love greens! All types. I do mine pretty similar but I fry pork in my stock pot. Then I put my water in, then greens.I sometimes use bacon or hamhocks. I leave mine in to stew the whole time with greens. I add in a few tablespoons of apple cider vinegar, a tablespoon of brown sugar, and some red pepper flakes. I usually leave mine in the pot. I like the idea of pan-frying them after you cook them. Good stuff there.
    Love steaky meat but it is been a while since I had some.
    The best part of the greens is the pot likker haha. Dip that cornbread in that potlikker...yum yum.
    Then if you got leftover cornbread, we have cornbread and milk as a snack.
    That meal look good, you just needed some chow chow on your beans haha

      Sounds good! Yep, that’s where the vitamins go! We eat corn bread and milk every day if we can. I heard that, I never did learn to make chow-chow. Maybe one day I will. Mama made some good

      @@metcalfmills5679 I’ve never made chow chow either but mom does. She uses my grandma’s recipe which I’m sure was passed down. Hers is more vinegar and hot as some is sweet. I don’t like the sweeter version but I guess it’s how you was raised.
      My dad ate cornbread and milk a lot. He passed away in 2019 from Alzheimer’s. Sure miss him! I got a video up of our last fishing trip together if you ever care to watch it.

    Hey Justin, I love GREENS! It don't much matter which ones they are or if it different ones all mixed together. With and without meat as kids we ate what we were given and we liked it and were thankful for it. Do you ever have onions or garlic in the greens? I love how you got your cornbread in the cast iron skillet. Do you get the pan hot along with the oven and when the oven is ready pull out the hot pan and pour in the cornbread mix? You can hear is sizzle when you pour it in. Nice video take care bye for now

      I can eat greens the same way but mustard is my favorite. I cook greens another way and use garlic. I do not preheat my corn bread pan, mama didn’t and I never did. Thank you for sharing brother.

    My mother taught me how to make greens too. I like mustard greens, turnip greens and poke greens. I make my poke greens like you do but not the mustard I'll have to try it the way you did it here.

    Never heard of dill pickle juice on greens. My family always uses pepper sauce juice. Gonna have to try that. Guess kind of the same both have vinegar . :)

    Great video as always Justin! The leaves of your mustard is entirely different looking from the ones we have in our local (Southern California) nurseries. The ones I have seen here are more shaped like dandelions. I would love to try the ones your using. It's our season for growing greens here. Can you give more information on what variety you grew and a source where I can order seeds. Again thanks for all you do in sharing your family's wisdom with us.

      Thank you for watching Marty! There are a lot of different varieties of mustard greens out there. In the video, those are old fashioned mustard, I also grow souther giant curly and Florida Broad Leaf is a favorite. My videos #31 & #42 shows how I sow the greens. You should be able to easily find the greens by name on google, but I f not let me know. I appreciate you and am glad that you enjoy my channel.

    Great video, I love the way you give all the details. I'm a sallat lover too. I like mine with a crunch to them and I chop them after I cook, add a little cheyenne pepper vinegar. I agree everything else on the plate is just garnish.

    I always eat them with some apple cider vinegar. I’ve never tried dill pickle juice on them. Next time we make some I’m definitely going to try some pickle juice on them.

    I’m going to make these when I harvest my mustard greens. I will omit the pickle juice, may try vinegar. (Not a fan of dill)

    Question: I worry about rain too, and chemtrails. You say you wash a lot of it off. So well-water isn't as contaminated as rain water? How about the roots taking it all up? --feeling worried in the Ozarks

      We don’t have well water. The glyphosate is my big worry, it is the thing that I know to worry about. Just do the best we can with what we got. Thanks Terry.

    Does anybody call a brown paper sack a poke down there. We were raised to call it a poke and when I moved from southern West Virginia I was made fun for saying poke here in Newport News Va

    Looks similar to cooking spinach? Could i just skip the water and fry them with my diced up bacon? I do that with spinach.

      Yes sometimes I fix it that way. I like to chop some garlic up, fry it a little bit first and then add the greens!
