I just tasted the recipe ☺️ i used agaricus mushrooms and worked perfectly .
The taste was a bit oily so i added two more garlics and some salt. I'll now start doing the eggplant recipe .

This is the recipe i was looking for came across it today. You can use any mushroom, my nonna did this .i love these with italian bread. I love the thinly sliced eggplant with oil to, and giardinera! Spelling wrong lol. Mixed veg with cauliflower, carrot, olive, onion, celery etc.

If you want to keep longer than 6 months. Do you do water bath. Boiling jars? For how long?
No because the oil will preserve them 😉 this is why it’s very important that the oil cover them very well

Could I use coconut oil instead? Will it go rancid and smell awful? Also could I use the oil from sauteed mushroom for preserving instead of pouring new fresh oil into the jar?
Better any kind of seeds oil will be better
You can use the old oil for preparing other food or on the bread And use a new oil for new mushrooms 😉

This mushroom isn’t common here in Norway either, but I have found it a couple of times in an asian supermarket, so if you have asian stores where you are, give them a try. I especially loved the brown one, more tasty than the white. I fryed/pressed it and added spices and cooked out the pan with coconut milk and added bouillon powder and spices. Soooooo yummy in place of meat! 😋
