How to make spring rolls easily!

  • This recipe is Vietnamese and comes to me from my mother-in-law whom I thank for this teaching. We often think it's difficult to make homemade spring rolls, when it's quite the opposite! It just takes a little patience. This recipe makes about 40 spring rolls! Crispy spring rolls! Know that once cooked, they freeze perfectly well. An easy recipe for a brunch or a dinner aperitif or a movie night, why not! Good tasting !
    Ingredients and preparation:
    1 grated carrot
    30 g of fresh chives
    1 onion
    1 shallot
    60 g of mushrooms
    40 g of white cabbage
    125g prawns
    500 gr of meat (pork or beef or both)
    2 eggs
    100g rice or soy vermicelli
    Pepper and salt
    Water + 1 tablespoon of flour
    Frying oil
    1 - You can replace beef or pork with chicken or just vegetables.
    2 - You can cook the spring rolls in the oven provided you brown them with a thin layer of oil.
    3 - I used fresh mushrooms (but usually I take dried mushrooms that I rehydrate).
    4 - If you mix your stuffing (this saves you from adding eggs in it).
