I'll link some others creators videos here that I think might explain this well and help you - the focus of this was more so on the sides and everything else around it! Id highly recommend using a thermometer for the Turkey though. Every one is a different size and different temp, some stuffed some not, so using a thermometer is the most accurate way. Leave yourself a few hours (3-4 sometimes) to cook it and then an hour (can leave longer) to rest it and you're good to go! :)

For the roast potatoes, a bit of bicarbonate of soda (baking soda for the Americans) in the water really helps when you scuff them after parboiling
