1 teaspoon butter or coconut oil
3 very ripe bananas, sliced
2 teaspoons vanilla
¼ teaspoon cinnamon
2 tablespoons maple syrup
1 cup steel-cut oats
2 cups of unsweetened almond milk
2 teaspoons ground flax

I just made some the other day to bring to work. I heated it in the microwave for 30 seconds, just enough so it wasn't ice cold. If was so yummy and chewy. I loved it. Instead of almond milk, I used oat milk. This is something I will definitely have again, and I think I will try some of the other recipes you have shared.

The flax is great for omega 3's as well. Dr. Greger recommends a tbsp per day, so this is great.

Wow, great idea! I’ve always put banana in my oatmeal, but I never thought to cook them or make them overnight oats.
you can definitely also use this method -of cooking the oats with the cinnamon and a little maple- and top your regular oatmeal too! I hope you try them!

Love this. But if don’t heat the banana, just add in the oats at night with maple syrup and cinnamon. Will it taste same??
You can completely omit the banana -or any other fruit- and just soak them overnight with maple and cinnamon (sounds delish!!).
I thought you had to heat the liquid when using steel cut oats for overnight oats? I see some people saying they won't soften up like rolled oats. Is this true?
There are two types of steel cut oats: quick-cooking steel cut oats and classic steel cut oats. The "quick" steel cut oats still look like the traditional but they pieces are smaller and these will soften up overnight. The other, the larger pieces and traditional, will not soften up overnight. Heating up the milk is up to you. That doesn't make a difference as much as the type of steel cut oat you use.
