    My kings and queens, this jollof stew is a time and life saver in the kitchen of any African food lover! I made party jollof for a friend who’s having an event and employed my assistance. She and all her guests were very happy with the end product which you also must watch and try! Make it in huge batches when fresh produce are in abundance and inexpensive and store in your freezer! Versatile as may be used in different stews such as beef, fish, chicken, lamb and even vegan/vegetarian recipes! Also learned how I make my flavorful, and multipurpose tomato sauce in this video!
    Ingredients for tomato sauce:
    * 4 pounds fresh Roma tomatoes
    * 3 red bell peppers
    * 3 green bell peppers
    * 60 g fresh ginger (peeled)
    * 10 cloves of garlic
    * 2 Fresno chilis
    * 8 sprigs of spring onions (scallions)
    Wash and cut up tomatoes, onions, ginger, scallions, and bell peppers. Combine all listed ingredients in a stock pot, cover with lid and bring to a boil, and remove lid, allow to simmer down and reduce gently on medium heat.
    Then turn heat off, once reduced to your preferred level of moisture, allow to cool down, and blend to a smooth purée! Voila! Your flavorful tomatoes sauce is ready!!!!!
    Jollof stew ingredients:
    * 1 & half cup sunflower oil
    * 8 shallot onions thinly sliced
    * 1/2 cup tomato paste
    For spice blend:
    * 1 teaspoon aniseed
    * 1 teaspoon black pepper corn
    * 1 cloves of whentia (grains of Selim)
    * 2 Ghanaian nutmeg ( substitute with 1/4 teaspoon of grated regular nutmeg)
    * 2 white onions
    * 6 cloves of fresh garlic
    * 30 g fresh garlic
    * 8 cups of homemade tomatoes sauce
    * 6 petite bell chilis (kpakpo shitor) substitute with 2 Serrano chilis chopped.
    Rest of ingredients:
    * 3 bay leaves
    * 2 tablespoons of smoked paprika
    * 1 teaspoon white pepper
    * 1 tablespoons of dry parsley
    * 1/2 tablespoon dry thyme
    * 1/2 tablespoon dry rosemary
    * 1/2 oregano
    * 1 tablespoon of turmeric
    * 1/2 teaspoon cumin

      I know for a certainty we have thyme. The dress produce sellers may stock parsley, and oregano. I’m pretty sure we have cumin seeds called a different name. Gotta research and get back with you.
