Hey Aki, just a small tip. Next time you want to do a purée, I definitely recommend adding some sort of liquid. Water obviously works, but you can also add other types for different results (broth for a more flavorful result, milk or cream for a creamier purée, etc). This also allows you to spread it much more easily, and makes it easier to purée in general ☺️ With that current texture, though, you could also make a quenelle of the blitzed edamame if you want that level of thickness while still making a “gourmet” style result. You shape the paste between two spoons until it creates an almost rounded shape, and then plate it as desired.
Honestly, with his strong tastebuds and stomach, it will take a lot for him to dislike something. As long as its safe and edible, he has no problem with it.

When making the puree. You can try adding a little water. It makes it easier to blend and it also makes the puree thinner. All in all you did good. Looks nice.

the blender could be struggling because it's a very dry and small amount of mix? You could try loosening it up with a bit of liquid next time you try to make puree :) I make a pea puree that I add a bit of milk and some seasonings into, which is nice, I imagine it'd be similar with edamame.

Mortar and pestle is not needed. Fun tip, if you don't have a juicer, you can extract juice from the fruit by blending it and pushing the pulp through a flour sieve, if the fruit has finer fibres, layer the sieve with a paper towel and push the pulp through it. I had to do that when making citrus curd from mandarins (from my sister's mandarin tree) and pomelos last month, it worked well.

Aki! For future reference on easy purée for urself do a rough chop of all the edamame to make it smaller then after the oil add a bit of the water u boiled to the edamame in the blender. Or some stock. Always add a liquid to purée to help it liquify properly. Using whatever u used to boil usually works! And straining it after is a must if u want to make it smoother.

When making a purée in a blender you need one of the rods you can stick into the bender while it’s running to manipulate what you are blending. You’re doing great just keep grinding it out. Experience is key
