    I make pane forte every year. I use rice paper and tart ring.

    Dear Stephanie,
    What I personally love about your videos is that you actually EXPLAIN why you do certain things during the course of your recipes. So often cookery books just give you instructions and I often wonder why you should do certain things at certain times, now I know. Baxter so well behaved, my dogs would have those biscotti off the counter the minute my back is turned!

    What a festive holiday cake, A great alternative for fruitcake! I don't think think three will be any groaning complaints , " Oh no, I hate fruitcake!" This is so different, so beautiful! Thanks for sharing, Stephanie!

    Stephanie, I made this cake for Christmas. What an amazing recipe! Thank you for your excellent instruction. This cake is absolutely delicious. Delicious! I made mine with just hazel nuts and instead of using ginger spice, I used minced candied ginger. I can't say enough about how lush this cake is. Thanks.

    No coriander seeds? When I was in Siena I was told coriander seeds were a must for authentic Panforte. I make it every Christmas from a family recipe that does not contain cocoa or chocolate, but does include coriander. A small amount; it lends an interesting spiciness. The spices make it smell like Christmastime.

    We love this recipe so much that my friends and I want to make small ones as our holiday gift project to give to friends. We have 5 x 2 pans which are not springform. Do you think we can make it work without the removable side? Also, how many of those small pans should we be able to bake at one time in the oven without altering the results? Thank you.

    This looks delicious and very authentic. Where do you get the candied fruit? Do you make it yourself or buy it? I have found that the candied fruit available in the markets near me in California is of a very low quality. Any suggestions?

      +I recently ordered through King Arthur Flour's website. Their candied fruit is from Italy and I found it tasted pretty good .debracole

    Stephanie, do you store nuts in the freezer/refrigerator to prevent them from going rancid? Im beginning to bake late in life and I want to thank you for inspiring me to do so (my kids thank you as well : ) I love your videos and have learned so much from them.     Ow can I check whether the sugar syrup is done without candy thermometer?

      Farha Abdul Rahman You can drop a little of the syrup in cold water and check it that way. I have a chart on the stages of cooked sugar that tells you what the sugar syrup should look like at the various stages. Here is the link. joyofbaking.com/StagesOfCookedSugar.html

    Hi there Stephanie: I've always wondered what you do with all the stuff you make...you certainly can't eat everything you make or your family even. Do you give it to neighbors, church groups? I am concerned about the diabetes factor with all the sugary stuff you make. I'm just curious. I made this panforte, BIG hit at a potluck I went to.

      I've only made Panforte with honey. You could try using corn syrup or golden syrup and see if you like the results.

    Could you just leave
    Out the candied fruit? Otherwise that cake looks sooooooooooooooooooooooooooooooooooooooooooooo good. Keep on baking and don't stop. 😊😘😚😙💛💙💜💚❤️💗💖💕💖💖
