Hi Pixie B. I am glad you like the recipe. Although I called it a cake it is, for me, more like a sweet. In fact I have cut some of it into wedges, like cake and the remainder I have cut into small cubes. I have vacuum sealed them, but am now tempted to open the cube pack and coat them in chocolate as well. It is very sweet and I think is best eaten in small pieces.

I had some that was commercially made some where in Italy and you could pull your teeth out trying to eat it .Your's looks much softer. I couldn't figure out what the rice paper layer was . Looks very good.
HI Dale, the texture is such that if it sets too much it could pull your teeth out. But mine is just very chewy. It does taste too. Yes rice paper is used on things like almond macaroons and other sweet bakes that might stick to the pan. These days the rice paper is often made from potato starch I think and it seems to be thicker than when i was younger. But it doesn't affect the taste of the baked item.
Hi Henrietta. From what I read it says store it for up to 4 days in an airtight container. But another website says "Storage: Panforte can be kept for several months, well wrapped, at room temperature." So I expect if wrapped properly it will keep for quite a while.
@@henriettahenson It might freeze ok. I saw this "Bev, I make panforte regularly and find it lasts really well for ages.... I think I have had it in sealed containers for a few months and it is still good. As it is only dried fruit, nuts, chocolate (maybe), sugar and honey then there it really should be shelf stable. I have never frozen it and trying to think if anything that could go wrong but think if you wrapped it in enough clingfilm and then foil that it should be fine." I also thought, just now that this would be perfect cut into little cubes(like chocolates) and served in those little paper cases. As it is very sweet one doesn't need to eat a huge slice.
Hi Jim. As I mentioned to Pixie, just now, I have cut mine up into wedges and cubes and I have vacuum sealed them in two packs. But wrapped tightly in plastic wrap and stored in an airtight container they will keep just fine for a long time, according to all I have read.
