Hi! So, when you make these infused sugars, particularly the berry, how would that work atop something like a creme brulee? I can't help but wonder if the torching wouldn't make the berry char, and ruin the effect I'd be shooting for.

I heard of "salted caramel" flavored sugar. Do you have any suggestions on how to even make that? BTW loved your video, you made everything so easy to follow.
+BJ Garcia You can try browning some sugar in a pan a little bit and adding salt and if you have some big pieces blend them and add some salt. Be careful with the sugar it will be very hot.

When using fresh mint you will always have the mint particles, you can avoid this by using a mint flavored extract or you could mix the whole mint leaf with the sugar and allow it to sit overnight. Then remove the mint leaf and the sugar. You will have plenty of mint flavor.

You can use dry organic rose petals which have been dried in the microwave or fresh petals.

The fresh fruits are very wet and can dissolve the sugar, I recommend the dried fruits.
