@@goodhealth3020 I basically ate fruit, milk,.Steak, liver, eggs, butter, oysters, white rice, some veg (not much) moved onto sourdough bread and potatoes. I had plenty of bine broth or gelitine every day. Keeping my carbs up over 175 was key. If i had less carbs than that my thyroid would tank and coldness would come back. Also eating enough calories. I was wat under eating at 1500 cals a day and was able to get those up and my metabolism soared. I can eat 2500-2800 a day now. It's amazing and delicious. All my hormones balanced out to normal. Thank you for sharing such great content. You are a fantastic interviewer- love how you summarise/synthesise everything and try to draw out practical implications for your audience.
On dairy, I do think quality is very important. I’ve lived on four different continents (most of my childhood/adolescence in the US) and remember getting an acute histamine reaction from dairy products in the US. Since then I subconsciously moved away from all dairy products until I moved to Europe. I started consuming dairy right after coming off a long term vegan diet and surprisingly experienced no adverse effects. In fact I thrive on dairy and it’s a staple in my diet now.
I see a lot of US based influencers saying blanket statements that dairy is bad and causes weight gain/inflammation, but I think this has to do with the quality of dairy in the US and hope that more people would try dairy if they have access to a reliable source. I’m fine with any store bought dairy product (w/o additives) and it’s sad to see dairy getting so much hate.

24:00 Concerning Greek yogurt. It is true that Greek yogurt has much less lactic acid as opposed to regular yogurt. But what many do not know is that there are types of Greek yogurt as well. The best Greek yogurt with the least amount of lactic acid, even more so than regular strained Greek yogurt is triple strained Greek yogurt. Chobani non-fat is one of the brand examples. They don’t add stuff to it either. If you taste that compared even to regular Greek yogurt, you will notice a different in the taste. The triple strained Greek yogurt will have virtually no acid taste it, even compared to regular strained Greek yogurt.

Ray Peat ideas is the way to go. WestonPrice has some good info too.
From what I understand the Ray Peat principles recommend white sugar as the extra source of calories after orange juice as the main carbohydrate. Milk's source of lactose is the most thyroid stimulating carbohydrate of all.
The coffee consumption is around 150 grams of dark roast; dark roast is chosen because it is highest in niacin, that much should give about 50mg of b3 which increases sugar oxidation, high in potassium, source of b1 and according to Peat coffee acts as thyroid, will increase magnesium retention/utilization. He says thyroid also increases sugar oxidation. Adding white sugar to coffee that strong then has the required nutrients to use it. Combine with coconut oil, which also greatly enhances sugar oxidation. I think he recommends a teaspoon at a time. Having sufficient salt will also help this process and the production of carbon dioxide.
Marmalade is recommended too, especially from seville oranges. Strong anti-estrogen, anti-histamine, anti excessive nitric oxide.
Starches not highly recommended, as they tend towards persorption, can increase endotoxin; consuming with saturated fats helps counter this. White rice and potatoes are the best if starches are to be consumed. I think he also consumes turnips and squash too.
According to Peat 20grams of potatoe proteins= about 36 grams of dairy protein. The keto acids help lower ammonia too and increase the utilization of protein. Honey is recommended, it is a staple carbohydrate of an established society.
Peat also consumes nixtamalized corn, this process increases the calcium and niacin in the corn. The only thing I don't understand with this is it appears very high in pufa which is not consistent with his other views, unless he consumes very little of it. I know he recommends coconut oil to counter pufa and usage of vitamin e too.
Thanks for having Georgi on and your prior interview with Ray Peat.

Around 60-33-7 carb-fat-protein in human milk. Protein is quite low but it is of the highest quality and other factors in milk assist its assimilation, including its high carb ratio, so for adults a bit higher is probably good. Fat is fairly high but not a problem due to the baby's high metabolic rate. As we get older pufa is accumulated into our fatty tissue. You need to take into consideration that you can't just replace one type of carb/protein/fat for another and expect same effects.

Hi, Great 3 part critisim series. I have a few comments that weren't addressed. Apart from lactose intolerance, what about the large number of people who are intolerant/allergic to milk due to the casein protein, some people can tolerate a2 and not a1. Other folks that have Celiac and even non-celiac gluten intolerance experience casein intolerance/allergy due to the mimicking of the very similar protein allergens. There are many people diagnosed with celiac and many more that have it and are not diagnosed. I for one was diagnosed at 50 yrs of age, yet I had been seeing GI Dr's since my early teens. Last yr I was experimenting with raw a2 kefir, but we have moved across the country (Canada)and there are thus far no good sources, impossible to get raw dairy here, which cut my experiment short.
The other question was about addiction. I agree about the high cortisol and low dopamine, but it is not always the cause, yet it is most always associated, and I believe that many addictionS, as you mentioned can relate to past traumas, managing lifestyle stress/circadian biology etc, but a huge missing piece is nutrient deficiencies ( Inc food, water source, light source, esp if long standing) which, will of course, impact all hormones/neurotransmitters, ie cortisol and low dopamine as a result of and not really the cause of addiction. One small example is thiamine deficiency, even if subclinical can lead to obsessive/addictive behaviors. Another is oxalate poisoning which can inhibit our ability to read our own body signals ie satiation, which usually, by way of wasting nutrients can cause very problematic deficiencies. High oxalate burdened people often crave high oxalate foods (until they learn more about the numerous ways oxalates damage the body). And there are many more ways people become addicted. And lactose intolerance is not only the only issue with dairy, which seems to be the focussed issue that comes up.
Thank you for the series, good questions and responses, and genuinely helpful information.

I think Georgi often mentions that weight is not always a great measure of health and that ironically some who are overweight are more protected from certain diseases, better recovery from certain surgeries, and health issues. Of course, I think that one can hide behind this notion but looks can be very deceiving. I think the speed and sharpness of his mind as well as his energy are good indicators that his metabolism has to be very robust. I have had plenty of average sized patients that actually looked healthy that were not able to ovulate and get pregnant until they gained weight. Obviously, being morbidly obese is undoubtedly not very healthy but I think many stockier humans can still be quite healthy.

I had a question on the ongoing debate on dairy. I recently read an article where it was saying that flash pasteurized milk particularly the organic milk uses a much higher temperature for shorter period of time but the proteins get denatured at that high temperature. Where as regular milk. Is pasteurized slower at a lower temperature but means the milk will not last as long on the shelf because all pathogens are not fully eradicated. I've noticed that organic milk shelf life is much longer than the regular milk which is probably because of that reason. I tried some regular milk recently and noticed I was much Fuller on a glass of versus when I drink organic organic milk unfortunately all of them are store-bought. Is there any Credence to flash pasteurization denaturing the milk proteins because of the higher-temperature? It just seems hard to win with any dairy. Raw dairy runs the risk of infections from pathogens. Regular milk has all the hormones and everything else in it pesticides etc. And now possibly organic flash pasteurized has denature proteins?

I don't have any issue with dairy at all and consume Whole Foods 365 organic brand dairy products. Opinions? Also I drink chocolate milk post weight training and use nonfat milk for quick absorption because I eat a regular meal within an hour of that. I see that Kalona doesn't make nonfat milk but I'm considering switching to Kolona regardless for my post weight training chocolate milk. Thoughts? Also, is Wild salmon ok for my weekly fish? I realized that it's higher in PUFAS but.....I wish that everyone in the nutrition space who cites a study would validate it by stating the source and the valid statistical parameters employed in it!

The starch in well cooked potatoes is gelatinized and the safest form of starch to consume, perhaps the next best thing to more simple sugars. Potatoes are also nutritionally quite akin to fruits, being high in nutrients, especially potassium and vitamin C. Animal feeding experiments show potatoes having a much better protein content that the amino acid analysis indicates. Potatoes have keto acids that the body can convert amino acids. Potatoes are also essentially void of fat (including PUFA) which means the body will make safe saturated fats as needed. Also the high carbohydrate diet deficient in PUFA will keep the metabolic rate high.
Potatoes have proven to be able to sustain people during a famine. The deficiency that is likely to occur on a potato diet would be that of vitamin B12, which is easy to avoid with some animal protein. The famous Okinawan diet was around 70% purple sweet potatoes, which are in many ways quite similar to potatoes.

Craving sugar, chocolate, etc, is much different than craving a drug/alcohol. Craving drugs/alcohol is suffering not the same level as with sugar, etc. Someone who has not experienced that kind of suffering (craving) will never really understand. One doesn't choose to crave. That being said if you cut out sugar from your diet you will experience withdrawals as you would with caffeine, nicotine, etc. This is a very simplistic example, it's much more complicated than this.

Turns out chasing down otherwise unexplained pathologies is very nuanced, as well as individualistic biology, all housing these functions differently. There is no one way that people are wanting to hear. It’s worth mentioning that this science is still in its infancy and they truly are coming up with it as they go along in essence. It definitely is hard to follow and thus so many doctors shut this down because its something they cannot explain to their patients let alone themselves.
