Hi there... I'm a Dubliner and Coddle was a favourite in our house. But it was always 'white'. Some people removed the rasher of bacon and sausage and put in chicken and chunks of boiled ham. But the original was white, with boiled sausage and boiled rasher of bacon. A beautiful flavour.

I’m Scottish and my Mum whenever making a stew would always but chopped up sausages in with the stewing beef and veg. They were always my favourite part. Though it’s also quite common for steak pie in Scotland to have sausages through it too, I’d maybe even go so far s to say that steak and sausage is maybe more common than steak and kidney when buying steak pie from the butchers (steak pie being the traditional New Year’s dinner in Scotland).

My great-grandmother was Irish.She was from county caVin. My favorite thing to cook that my grandmother loved to make buzz.Irish pot roast with carrots and potatoes and gravy.And you have to use eyeround roast Tied up with a string. And I would Bake some dinner rolls with it and brush them with butter before cooking.
My Mom would do a boiled dinner with Ham potatoes carrots celery onions and cabbage,it was a staple when i was a child up in Rhode Island.. Then moved all over this country and ended up in Louisiana for 30+ years and the food is the best,and when you say boil here its either Crawfish crabs or shrimp with lots of Cayenne garlic black pepper and crab boil ehich is Cajun seasoning really,which i absolutely love..
Ohhh my! They both look delish to me! We make one pot stews like that here in Canada as well, most folks in Eastern Canada have Irish and Scottish heritage and still cook the old style comfort food! 😉 I would like to recommend for Grandad, a lovely POUTINE DISH That's a French Canadian dish consisting of fried potato chips covered in cheese curds and smothered in gravy! My nanny used to make poor persons hotpot. Mince and onion with sliced potatoes on top thickened with old-fashioned powdered gravy! All our family still does this meal today. My nanny and her mother used to take it to the bakers shop and leave it to slow cook overnight when they shut the ovens off for the night.

You should try a louisiana style cajun gumbo from america, let me know if you want a recipe...the trick is getting the roux right, you gotta get it dark enough without burning it

I am Irish and there is no such thing as a white sauce! It is cooked with all the ingredients only - hence no colouring! Brown is bisto added - get your facts correct before insulting us. Grandad is so false!!

To gain the thickness of White - you just ensure you add plenty of potatoes and bring to boil then simmer. Only a minority add bisto for browning as it is eaten naturally. I very much doubt this man has an Irish grandmother! Claims this to gain attention to gain more views, subs etc. Have a lovely day.x
