    Just as a future solution: My grandmother would dry her apples on an old screen door that had metal legs made to hold the new table up. She used 4 tin cans with water to sit each leg into it to keep ants away. She placed her apples on the screen and covered it with another screen outside. There was air flow all around and dried real quickly. Peanuts were done the same way and after dry she stored them in a cloth bag that she would lay out in the sun on the screen table to dry, would rotate several times a day so drying was consistent. The ways the older generation did things is valuable information to hold onto. Love your video!

      Oh My Gosh ! You are telling off on yourself 😁 in such a good way . I remember my g-pa building a "special" table for g-mama for drying some of her foods . I know I am telling off on myself also but you are so correct on many of the old ways .

    I'm dehydrating eggs right now. I can easily fit 40 eggs plus a dessicant pack in a quarter jar with room to give it a good shake once in a while. 2 tbs of dried egg mixed with 3 tbs of water equals 1 large egg. When you rehydrate them it doesn't look like eggs you scramble in a bowl but when you pour them in a fry pan they are exactly like freshly broken eggs. My husband and son can't tell the difference. Perfect for cooking, too.

      Yep, as noted in the pinned comment above and in the description box, I have put up a LOT of dehydrated eggs and used them and even did a video on it. I love it! My new favorite way for preserving eggs. I still need to try them in my homemade pasta and mayonnaise but feel certain they will work just as well as fresh or frozen

    Can't believe I never knew about dehydrated foods. We've had a dehydrator 35 years and all I knew to do was deer jerky. I'm ashamed of foods I've wasted that I could of dehydrated and preserved. When you know better you do better and I'm certainly looking forward to the dehydration of foods saving our money and health. Tammie

      I’m 52 and just getting into food preservation for our family, in the last 2 years.
      I grew up on my grandparents farm and my granny used to dehydrate apples, pears, figs and beef jerky (also sometimes venison)….. I honestly never knew other foods could be dehydrated until watching many of these videos!!
      My husband got me a dehydrator for my birthday a month ago. So I’m excited to get started…. I’ve been doing so much canning the last 3 months. It will be nice to have a little change of pace ….. but I do LOVE canning though!!

      Same here. I have barely had to spend any money building my pantry. I just started dehydrating the large amounts of food that I used to throw away. I already know what will go to waste when I buy it, so the day I buy it, I dehydrate the “waste.”

    Hi Heidi,I’m a baker and I was surprised when I dehydrated 7cups of raw pumpkin ands it made a 1/4 cup of pumpkin powder on my wood stove. thanks for the video did a great job!

    You gave me an inspiration today, I had forgotten that last year I cubed a butternut squash and dehydrated. I’m going to use my mandolin and slice my pie pumpkins and winter squash thinly sliced.

    Another great thing about storing in jars is that you can "reuse" jar flats for vacuum sealing.
    My mother and grandmother always dried apples outside in the sun every fall.

    I started dehydrating about 3 years ago and have found it so useful. I don"t have a lot of space and it has really worked well. I had a bumper crop of potatoes this year. I pressure canned some and dehydrated a ton. It was great not to have any waste! And that's just one example. It has really helped with not wasting precious resources.

      How did you prepare potatoes to dehydrate? Just slice/dice? or wash, cook, etc.? Skins or peeled? Thanx!!

      @@shibui99 I started making thinly sliced potato chips in my air fryer. Super delicious. It wouldn’t take much more for them to be considered dehydrated if they weren’t already, but they do take up significant room and have to be layer out in a single layer. I’ve decided to use my old Charlie Chip tin to stored them in. If memory serves potato chips stayed fresh in there a really long time.

      @@shibui99 sour cream and onion dip was a favorite. I used some sour cream I had on hand and threw some dehydrated onion directly in and a bit of salt. It was delicious.

      @@shibui99 I sliced them on my mandolin, then blanched for 2 minutes. Dunked them in ice water to stop the cooking process. Drained and put into the dehydrator. Also, I did peel them. Blanching keeps them from turning that ugly brown/black color.

    Among many other things, I dehydrate pineapple slices from fresh pineapples. What a treat !!! My 6 yr old granddaughter is a very picky eater, but she loves these dehydrated pineapple slices. Also wanted to dry eggs and milk. Now I know I can safely dehydrate both. Kudos Heidi!!

    I LOVE dehydrating!
    One of my favorite things to dehydrate is cabbage.
    Our local produce place- Chuck's Produce- has fresh, local cabbage for .25 lb this week. Really beautiful heads!!
    I bought 54 lb and have a crock of sauerkraut going and will dehydrate the rest and make a big pan of golombki (stuffed cabbage)

      Cabbage dries up beautifully! Red cabbage can be powdered and makes a lovely color for adding to lip balms if one likes a more purplish color. Same with beets

      Yes, I was hoping there'd be a Saeurkraut maker here in the comments. I've been making it for years, but was wondering, can you use dehydrated Cabbage, or is the good bacteria killed in the dehydration process, I'm new to dehydrating. I make Kimchi too.       @@maxibake9323 I always use fresh cabbage...I have no idea about the dehydrated.
      I use the dehydrated in soups and stews all winter long.
      I make kimchi, too! But I only have one big crock with the weights, so can only do one or the other at a time.
      I need to invest in a second crock!

      @@RainCountryHomestead I haven't tried making lip balms, but it is on my list. GREAT idea!!
      I do make sunflower, calendula , and dandelion salves for Christmas gifts.
      We are doing a totally homemade Christmas this year.
      Everyone is on board....including the Grandkids :)

      @@susanbystone7853 Me too, always use fresh, I am curious about it though. 🤔 I wish I had a Crock pot, I do my Saeurkraut & Kimchi in in the Cliptop Kilner jars, such a pretty sight, them all bubbling away on the windowsill. You can do Kimchi in recycled big Dill pickle jars, just leave the lid slightly open, so the gas can escape. Take care of you & yours Susan. 👍🎃❤🙂🐶

    I just learned, you can dehydrate can beans to extend there, shelve life.
    I already have been dehydrating frozen veggies and fruit.
    I like dehydrating more than canning.

      I have dehydrated fresh raw beans from my garden and they turned out great but I still only will use them in soups and stews. I prefer them canned

    I'm on my dehydration journey. I like to dehydrate herbs and small vegetables like peas corn green beans carrots. This helps me save money by creating my own MRE meals.

    I'm late to the party on dehydrating but the small amount I've dehydrated has turned out pretty good. Nope, can't afford a freeze drier. Not even sure I'd like one any ways. Good info, thanks.

    In The Good Old Days in the 1960ies our beds were made of springs......
    My Mom would have a bed carried outside into the yard..minus the matress.....place chicken wire over the bed frame and lay her peaches and apricots slices on it to dehydrate....
    Once she did it with whole figs dunked into a syrup solution prior to placing them on the bed rack but alas....the bees literally got stuck into them.

    I live in the desert where summer temps can exceed 115. My first efforts at dehydrating food was using a mesh bag with shelves intended for dehydrating herbs. I would hang it from the eaves of my roof. I used it to make jerky and dehydrating frozen foods(I have a very small freezer) because of our climate the bag only lasted one season so I invested in an Excalibur. My favorite things to dehydrate are ground meats, vegetables for my favorite soups, cooked rice and cooked beans. Making powders is going to be my next project. I just dehydrated some tomatoes from the garden and plan on making a powder. I will be ordering the silicone mats with a lip soon so I can powder eggs.

    I know it's a lot of trouble, but I love my dehydrated chicken pieces (I usually go for bite size.) for soups, casseroles, dumplings and dressing. I have to plan ahead for the next day. Night before I cover the chicken pieces generously in water, cover the container and let them set a good 18 hours in the fridge. 2 or 3 hours before I'm going to put the dish together, I put the chicken and it's soaking water in my small pressure cooker. I bring it to 10 pounds and then turn it down and just let it pressure low and slow for at least an hour before I check it. If it isn't tender enough, I repeat the pressure cooking part for longer. This sounds labor intensive, but if I'm home, there is hardly any hands on time. I like boneless, skinless chicken thighs best for this and space saving it is.

    Grapefruit rind: Omg my husband brought me a treat from Costco yday. “Grapefruit Tea Honey” It’s like a marmalade and it is amazing. I had never considered making a grapefruit marmalade, but I sure will now!

      Wonder if they used the peel though. Grapefruit peel can be VERY bitter. I tried it once in a tea and it was awful

      @@RainCountryHomestead Yes, there is a lot of peel in it. It is a very tart marmalade. Will probably make an excellent chicken/pork glaze. That’s assuming I don’t eat it all on crackers.
      There does not appear to be any actual tea in it, it says it can be made into a “tea,” but I …eww…probably wouldn’t do that, lol

    Found you not long ago and I love your videos and information you share. I have always canned but hubby bought me a huge dehydrator and just learning about it all the things you can do. I have only done venison jerky working on branching out now. Did mushroom powder and a mix of hot peppers. Thank you for all this info. Will be watching your videos during breaks.

      Maybe check your local adds. Maybe someone is selling theirs. Or if you haven’t talked around to friends, lots of people have them but don’t use them.

    Thanks for another great video, Heidi! You are an inspiration and a blessing! I did some dehydrating years & years ago - jerky once & applesauce once- which turned out well, but I didn’t continue - go figure. After watching all your great videos, I’ve started dehydrating again. Thankfully I still had my old dehydrator. My husband had been after me for years to get rid of it to free up space, but I’d never let him….boy, am I glad! Smiles to you!

    Thank you for a very informative video. I've only just started really getting into dehydrating. My favorite so far is mushrooms. I don't know of a better way to store them long term. An idea I want to try is preparing a soup mix similar to Soup Starter, if anyone remembers that from long ago. I really liked that stuff when I was a youngster. I'm thinking I could dehydrate pretty much all the components, and then someday when I don't feel like cooking, just dump it in the crockpot with water and let it slowly turn into soup.

    I dehydrate a lot. I particularly like dehydrating mushrooms, since mushrooms have a minuscule fresh 'shelf life.' I'll usually take off the stem, freeze them, then make soup stock. Then out to the hens! Then the mushroom tops I slice or chop. I rehydrate them in just-off boiling water for up to an hour. I have found that thinner slices and smaller dice rehydrate better.

      Right, I always dehydrate up excess mushrooms when I have purchased fresh and was unable to use them all up or when we have gathered or been gifted with Chantrelles

      I haven't had good luck with rehydrated mushrooms. They stay kind of chewy. But I do love to powder them and add them to just about any savory stove top recipe. Supposedly, mushroom powder is good in ranch dressing too, but I haven't tried that yet.

    I have been dehydrating foods nearly my entire life & swear by it for a number of reasons . It started with my Grandmother & Great Grandmother . I dehydrate nearly everything because of storage issues. I do can some things but I have to think about my storage space . I live in a 12x70 old mobile home so not much room for many , many jars . I don't like using plastic either but have to use 2 , 3 & 5 gal buckets lined with mylar bags in order to be able to store the amt of foods I dehydrate . I really like your specific remark about the apples . The 5 gal buckets can hold 125 to 150 lbs of dehydrated apples , potatoes , onions , etc . When several of my VERY GOOD friends heard how many apples I have in a bucket they think I am going to eat that many apple snacks . All I can do is lol then I tell/educate them on what can really be done with them . They are always surprised by what I tell them . If something happens to the power grid I want my 2 small old , very old , dehydrators because when it becomes impossible to find canning supplies they can be ran on a small solar setup or a generator. I will always have a way to preserve some food . It always amazes me that people that make jerky never think of their dehydraors are usable for anything but jerky . I like to season different meats before dehydrating for the flavor. I like them as snacks sometimes not just to cook with. I can go on & on forever it seems about why I like to dehydrate foods so I better quit or you really will have a book . You have a good day .

    For me personally, I don't like the texture of freeze dried foods, so I just don't buy them. I watched your video on dehydrating eggs, and have been dehydrating eggs all week. With the batch I have going now, I'm also dehydrating a banana pepper to crush in with the eggs for extra flavor. I only have 2 trays that will use about 14 eggs. More trays in my Amazon cart though. 😁 So many of the items you showed, I now dehydrate from watching your videos. Your carrots are beautiful btw. Many Blessings!!

      I am so hooked on dehydrating eggs and how well they work that I am not sure I will continue to freeze eggs. I will know for sure once I finally get around to trying them in homemade pasta and mayo

      @@blessedbloominghomestead9134 Did you freeze them whole or scrambled? I know if you do not scramble them, the yolks turn to rubber. I only freeze the eggs fully scrambled and they have turned out great for breakfast, using in homemade mayo and any baked goods

      @@RainCountryHomestead I froze them whole in silicone gingerbread molds because it's what I had on hand. The yolks did make cute yellow bellies though. 🤣 I'll try again, scrambled first & let you know what I think. Thanks for the tip!

    You brought up a childhood memory from school. We were learning methods the pioneers used to survive. Dehydrating apples was a big thing for eating as well as fresh scents in the home and crafts. We dressed up in clothing from the day and did dried apple dolls and clove covered apples. I was about to can some apples, but I think now I will dehydrate them.

    You are such a wonderful resource, I can't believe I never found you until Mary mentioned you as a go to for home made vinegar. Thank you so much for your sharing. I have a nine tray excaliber that I aparently have not used nearly enough. It comes out in the fall for my apple tree. I've not made a huge variety of things but you have changed that for me. This year I'll be going at it hard now that I've seen this video. my fave things I have made are apple spiced fruit leather, or apple chips with lemon juice and spices. Zuchinni chips sprinkled with cumin that stayed crunchy for years. Super ripe bananas cut thick made the most delish little banana treats I could ever imagine with crystalized brown middles (and I have never liked bananas (true story!), and last but not least, making my own raisins from concorn grapes. I dried them over half way and they had a squish of concentrated juice and with a crunch of crystalized sugar. Natures candy.

    Loved this video!! Thanks for sharing. I do play around with dehydrating. Glad to hear you prefer this to freeze drying. They are way too expensive for me and I just like playiing around with a dehydrator. This year I've done for the first time jalepenos. They turned out great. I just sliced them in rounds. I also did for the first time dehydrated tomato skins and powdered them. I hated wasting the nutritional skins after using the tomatoes for canning.

    Thank you for sharing your research and giving us such specific information. I have been feeling bad about not being able to afford a freeze dryer. Over $2500 + is not an easy purchase for many to make. I am going with regular dehydrated items... given the bigger picture. I felt like I was missing something by not having a freeze dryer! I've been mincing a lot of dehydrated items... I like that better especially my sweet yellow and sweet RED onions. They look beautiful! I think if all we're missing is mainly the vitamins... I can order supplements fairly reasonable to make up for that.

      You can easily grow greens (especially parsley) all year around to get those vitamins. Supplements are not always what we think they are. And, some will not digest the capsule so you get zero from them.

    Sometimes I dehydrate by the short cut method. I take the squishy prunes that can be purchased at every grocery store or online and dehydrate the moisture out of them. That way I can store them long term. When I'm read to use, I cover them with water and store them in the fridge. The water turns into the yummiest syrup and the softened prunes are great straight from the fridge or blended into yogurt or cottage cheese. I also buy 20 pound bags of frozen organic diced potatoes and dehydrate them. They rehydrate quickly and cook up just like the frozen ones. I've also dehydrated frozen veggies in a similar fashion.

    Thank you for this! I will try to dehydrate more veggies this year. My dehydrator's been busy lately dehydrating herbs from my garden for teas. We ran out of holy basil this summer that I dehydrated last year so ill be dehydrating more so we won't run out next year. I started dehydrating vegetables and eggs too. Its a lot of work but I'm happy with my accomplishments. Happy dehydrating y'all! 😁

    Was busy/lazy this year to make my garden fermented salsa. So I put all the ingredients into a blender and dehydrated them on the fruit Roll-Up dehydrator trays. The chips are so tasty I don't know if I want to rehydrate them.

    I love dehydration.
    Don’t know if I have a favorite but I’d I had to pick one right now.. I’d say Okra. It’s spectacular dehydrated. Even if you don’t like okra you may if you dry it. Toss with a smidgeon of oil and a herb or spice of choice when ready to eat. 😋

    I have both a dehydrator and a freeze dryer. I like them both for different things. I like that freeze fried food can be eaten without reconstituting.

      I cannot think of one dehydrated food that cannot be eaten without reconstituting. In fact most I prefer to eat as is dehydrated over freeze dried. I also love that I found a trick to dehydrating meats that make them turn out similar too and almost as good as freeze dried. I also have since been dehydrating my excess chicken's eggs and putting those up, bone broth, cream cheese, cheddar cheese, and much more. And this year I am dehydrating most of my garden harvest instead of canning and am loving out they turn out. I even took down a jar of home canned chili and dehydrated that to try it out. Reconstituted beautifully and I will be doing that from now on instead of canning to save space.

    I'm dehydrating burger for the first time. Any other meats that you dehydrate? And will start dehydrating eggs since we have so many. Love your videos and all the info you put out there.

    I told hubby the freezer is just a place to store stuff until you throw it out. This year I was good and pickled a lot of food. I should dehydrate as well. I love dried mango. I could eat it all day. I pickled my chicken’s eggs but maybe I need to look at other methods of storage. I do dry herbs, they are hanging all over the place. Americans are so much better at food storage than Brits. We are lazy as Supermarkets are always relatively close. When I stayed with a friend in NC her closest store was an hours drive.

    I can’t imagine you do all that on those little trays!!! Best thing my husband has gotten me is my Cabelas 40 rack dehydrator beast!!!! I fill that constantly! Right now on my second half bushel of lemon/water dipped apple slices! Life saver for tomato slices as well!

    I dehydrate because I can not afford an freeze dryer system. And dehydrating is a more time honored & time tested way of preserving foods for long term storage.

    after watching numerous videos. Although I think both options are great freeze drying is more involved, very expensive. Advantages is freeze drying will store much longer but honestly unless you are buying dry goods like beans or rice which need no prep at all for storage you should rotate your stock every two years, five at most. All the options will be edible stored for five years if vacuum sealed and properly stored.

      The thing is, people should be rotating through their foods anyway and dehydrated lasts 10-15 years, which is plenty if people are rotating.

    You also got to have good water source for your dehydrated food and cook it that is one con,where if it was canned you could eat as is that is a pro , I do a lot of dehydrating ,but have not put it to a test yet ,great video !

    I have not done this but adding 1:2 cup bread crumbs mixed into 1 pound ground meat before cooking and dehydrating will keep it from becoming little rocks.

    I just got a dehydrator and have been ‘practicing’ on everything that I have that you talk about in your videos. 😊
    I don’t have a way to vacuum-seal the dehydrated foods so I’ve just been keeping them in baggies. I plan on getting jars to put everything in very soon. How can I get a Vacuum-sealer? And,
    will my dehydrated foods start to spoil without the vacuum-seal?

    I do not have a dehydrator but dehydrated greens All Summer Long by placing them on a cookie tray outside in the sun with the screen of them to keep the bugs out worked great and I now have three gallon jars of dried greens for the winter

    Heidi, I love dehydrating foods! I love when things are on sale; I can dehydrate them and it saves money. Heidi, sometimes I will heat the water if I want my blueberries re hydrated and I believe you can do that with many things!     I considered a freeze dryer too, but have also decided against it. Not only is the cost to purchase so high, they take so much power to run and I want more sustainable ways to preserve foods. Dehydration is tops for me too. Possible with or without electricity, and, as you mention, foods take up so much less room.

      They do NOT take a lot of power!!! I have a watt measuring thing and my f.d. actually used less than the excalibur (my excalibur is at least 10 years old. BUT, f.d.s do have problems. It is easy to prepare the food for the f.d. and for the dehydrator. Both have the problem of rehydration if water is an issue. And, both you can eat right out of the jar and I actually prefer cinnamon apple slices from the dehydrator. And, I prefer spaghetti squash to make noodle dishes out of the dehydrator - something doesn't work the same in the f.d. For meat, I will not dehydrate - just do not trust it. And the f.d. is great for nuts and meats (cooked and raw). I have a lot of nuts in my diet due to health issues and they have some things in them that may be made better with soaking first. I did walnuts after soaking and they taste horrible, but I think that mixed in a drink or salad, it will not matter.

      @@marthaadams8326 thank you. I shouldn’t have said, “so much power,” but to me, I wouldn’t have enough solar to run one consistently to complete a cycle so it is a lot for me. I’ve watched several homesteaders who show that the cost is not great, usually only $3 or $4 dollars per load, which is certainly less than purchasing freeze dried products. Freeze driers certainly have a place in food preservation for those who wish to freeze dry foods. I do purchase some freeze dried single-ingredient foods myself.

    I dehydrated cooked pinto beans from gallon cans.
    Cheese was a real pain, made eggplant jerky (spicy).
    I haven't done eggs yet.

      We do not get much sun here but especially not once our apples are ripe. Here, apples do not get ripe until fall and that is when the heavy rains return to our very wet area of the world not far from a rain forest

    The pith under orange peel is pectin. I haven't researched how much you need, but if you take pectin before eating any ocean fish or fish from polluted water, the pectin absorbs mercury and passes on through your body and out.

      Yes, it contains pectin, though it in and of itself is not pectin. I am also unsure how much is needed but that is why marmalade does not need added pectin when making it because the peels are used in the process
