BEST PIZZA with sourdough - without kneading dough

    Today we will make a RIGHT pizza with sourdough without kneading. If you want to make pizza tomorrow, you will prepare the yeast this morning and after 8 hours the dough, which will be in the fridge overnight, so you will have the same result - a thin, crunchy pizza with puff pastry and crisp round wreath.

    Sourdough : I prepare 9 or 10 in the morning
    • 30 gr. sourdough
    • 120 gr. flour for all uses
    • 90 gr. water
    Leave it for 6-8 hours at room temperature
    On the same day after 8 hours we prepare the dough:
    • 240 gr. sourdough (which we prepared, must be at its highest point)
    • 340 gr. lukewarm water
    • 14 gr. salt 2 tbsp
    • 28 gr. sugar or honey 2 tbsp.
    • 28 gr. olive oil - 4 tbsp.
    • 510 gr. hard flour or for all uses
    Durum wheat flour has more protein than common wheat flour. And the higher the protein content, the more dynamic the presence of gluten.
    . Mix all the ingredients with a spatula, as shown in the video and let the dough rest for 15 minutes. We do the same the second time. After half an hour, the dough acquired a nice texture.
    Λίγο Pour some flour on the counter and fold the dough 2 times, like an envelope (Stretch and fold) making a ball, cover it and leave it for 1.5-2 hours to rise at room temperature.
    Πολύ Now very IMPORTANT - it must be refrigerated for at least 6 hours for slow maturation of the dough, then you will make a quality pizza. . The dough can be stored in the refrigerator for up to 3 days. Refrigerated pastries with slow maturation are very good for the stomach and digestion.
    The next day:
    On the counter, pour the cornflour or white flour, e.g. and lower the dough. Weight of the dough is 1150 gr. 4 pizzas from 26-28 cm come out. I divide it in half, from 580 gr. I will make 2 pizzas now and the other 2 tomorrow. The other dough will go in the fridge! Then make balls and leave them covered to rest for 15 minutes. With our hands we open the first pizza on the baking paper, paying attention to its wreath, so as not to press the bubbles that were created. The width of the crown is about 1 cm.
    In 1 pizza to calculate 3 cutters etc. sauce. Bake each pizza for 7-8 minutes in the preheated oven at the highest temperature you have.
    And a few words about baking. Preheat your oven to maximum for at least 20-25 minutes ideally, if there is a special stone, if you do not have the stone, you should heat the pan or a round hull. If your oven reaches 300 degrees - bake pizzas at 300, the hotter, the faster it bakes and the more tender it will turn out. If we bake at 180-200 degrees for more time (((we will dry it and we will not have a nice result at all.
