So, I just made this pie filling. I used Lindt Dark Milk Chocolate for my chocolate bars and this is the absolute BEST pie ever! I even covered it in Swiss Meringue so, chocolate and marshmallow topping? What's not to love? Thank you so so much for this recipe. PS: I know this video is 3 years old ;) Just found it today!
1 1/2 cups sugar 5 Tbsp corn starch 1/4 tsp salt (heaping) Mix together 2 cups whole milk 1 cup heavy cream 5 large egg yolks Mix together slowly mix dry and wet together then cook med heat constantly whisking till thickens 6 oz chopped chocolate (60%) 4 Tbsp unsalted butter 1 1/2 tsp vanilla extract Add to heated mixture Chill covered for 6 hrs

Oh my goodness I made this pie for Thanksgiving 2024 and after I put my homemade topping on it I NEVER saw it again! They LOVED this pie. We had a chocolate pie from a really nice bakery and no one touched that one. I should have made two. Thank you for such a great recipe!!!

Do you think it would suffer if I reduced the amount of sugar to 1 cup or 3/4 cup like I have seen in some other recipes for chocolate pudding? Also, will be using a graham cracker crust which is quite sweet.

What size measuring cup are you using? In South Africa ours are 250ml but I've been told a US cup is only 200ml - this difference could make a huge difference to a recipe - please advise

I stirred it for a while, then put in in the strainer. Really thick, and slow going through. On the video, mixture seems thinner. What, if anything, have I done wrong? Thanks for any help.

That would be fine too! I prefer to do it this way to ensure the custard is hot enough to melt the butter and chocolate fully and any unmelted pieces of chocolate would be caught, but either way works. :)

I haven't tried it. There will be a few alterations needed so I can't advise exactly how to do it.

I haven’t tried this myself, but I know it would take several other tweaks to work. I suggest you stick with the recipe as written for best results!
Mine was a little bit to sweet, and I used dark chocolate ( 70 percent) , and it did not set up nice, it was like pudding texture.

Why won’t the egg yolk mixture and sugar thicken.
It may just need more time on the stove top. If your heat is too low it can take quite a while, but you don't want to have it too high either.
