I saw some Yan Can Cook episodes in my youth in the 1980's & 1990's & even repeats in the last decade, on public television, so never got to see all of them when they were new. He had recently, a few years ago, branched out into Southeast Asian cooking shows. Anyway, it's nice to see these old episodes. Half of that audience have most likely passed away since then.

It's a chef from China who went overseas to teach foreign audiences how to cook Chinese food. So if anyone has done something "racial" it is him. The clapping is silly but it's part of the show's design, to make it seem more lively and interesting.
He's making a TV show in Alberta, Canada in the late 70s, and you're here complaining the audience is white and stir fried beef is exotic to them. Stop being ridiculous, it makes you look pathetic.
