    If you love Thai food but have never tried making it at home, you’ll love how easy and delicious this vegetable pad Thai is! It’s a mix of sweet, salty, sour, and spicy flavors, chewy and crunchy textures, and vibrant colors. This recipe is vegan (dairy-free, egg-free), grain-free (gluten-free), and refined sugar-free.
    Pad Thai is one of the most iconic dishes around the world. It’s the best-known example of Thai cuisine and the ultimate street food in Thailand.
    According to Natty Netsuwan, the term “street food” represents nothing but quality. Food cart cooks are in a very competitive situation; with small space, ingredients, and tools, they need to specialize in a dish or two just to stay in business. The best of these cooks have prepared the same dish day after day, year after year, constantly perfecting it.
    Different countries have put their spin on this Thai dish in recent times. Still, the combination of rice noodles, stir-fried vegetables, and a sweet-salty-tangy pad Thai sauce remains relatively consistent worldwide.
    While this pad Thai recipe is far from truly authentic, it’s bursting with flavor and comes with the most amazing sweet-salty-sour sauce.

    These are the exact ingredients I use to build a umami flavor that's plant based. I also use the brine from my fermented vegetables but try not to cook it to keep the probiotics and vitamins intact. For example, add some to a bowl of hot noodle soup in place of salt. Dried shitake mushroom and dried seaweed in your"fish sauce" recipe is a nice touch. The "dried" version keeps the flavor more concentrated while they are commonly reconstituted in water before adding to Chinese dishes. Garlic chives and green onions are both hardy perennials that are easy to grow in the garden. I enjoy your creations tremendously. Thank you Petra.

      Aw, thank you so much! I am so glad you are enjoying the recipes. I don't know why I never thought of adding brine from fermented vegetables to dishes. That's such a great idea! I appreciate you sharing it. Ah, I wish I had a garden and could grow vegetables. For now, I can at least grow herbs on my patio ;)

    I love making carrot ribbons. We also eat them raw in wraps. So fun. Love the add of maple to sauce. We do that here too, local real maple, hands down, the best. But I never cooked my sauce first, I like this idea. Thanks! Cheers, Ivy.

    Glass noodles are made from sweet potato starch--a good gluten-free alternative if you don't mind processed food.

      Yea, I do not like processed foods, including starches. However, I really like zucchini noodles and other vegetable noodles I make in my spiralizer :)
