    Pro tip, hand crush the tomatoes the maserating the seeds and skin detract from the balance of the tomatoes. If you don't like the texture get a food mill.

    Cool to see! Starting up a pizza-business like this myself. How did you get the custom horse trailer built?

      Hey Fredrik, I designed it myself but then got some professionals to fit it for me. They sourced an old horsebox for me and refurbished it, if you do yourself make sure you have a trailer/ vehicle with a solid/ reinforced suspension 👌

      Yeah, Personal preference. I feel you get more flavour when you put on fresh. With the pizza being so hot out the oven it does pretty much cook it anyway, especially if you close the box.

    Hi. How do you start getting pitches? I’m hundreds of miles away so no competition 😂

      That's the hardest part. Just try and find a bit of land that has a lot of passing traffic. My first pitch was a church car park on a roundabout.
      I would also advise you to work on social media so you get noticed. People will come to you asking about parties/ events if they can see the quality online. Good luck 🤞

      Ahh that is the hardest part my friend, so for years I had a fixed location and built up a customer base and social media following. It's hard to say where to apply because every area and council has different rules but normally if it's private land then you're fine. If you offer a quality product then people will come to you for weddings, parties etc.
      I would suggest finding somewhere that can be well seen by many people/cars and make yourself stand out. Also these days social media is needed, mess about making videos and try to peak people's interest. I used to do one or two different specials every week not only to attract different people but also to post different pizza's.

      Hey Eleanor! I used to do it full time from the same place - 5 days open (4-5 hours serving with 5-6 hours preparing, cleaning etc.) and 1 day preparation (making desserts, sauces etc.) and then take 1 day off every week.
      Now I just do odd events 😁

    you shouldnt bring tension in the dough before balling, thats nonsense. you do it when balling and have a much easier time if the dough is relaxed.

      You can use pretty much any kiln dried hard wood but for me personally I find silver birch is the best

      Trouble is Dave, cuz it's cooked at such high temperature the cheese is very runny so the cutter makes a bit of a mess of it. Suppose you could use a pizza rocker

      Depends on the outdoor/ venue temperature for me. Around 55% in the summer, up to 60% in the winter

      Yeah, I do always use it within 24 hours though. If you want to keep for longer you can put in the fridge to stall the fermentation process

      Hey Alan, you can use any hard wood as long as it's super dry but I personally use silver birch as it gives a nice flame which is important to give a nice charring of the crust.

      Probably to do with putting food to your mouth around other people's food, not supposed to touch your face at all while handling food. Also I guess you could cross contaminate by dropping your food into other peoples

      Sky's the limit! Depends what you want to do and the contracts/ places to trade from you get. The profit margin on pizza's can be very good compared to other foods

      🙌 the way forward! Does take more time than a roller but you get a much more even cut, especially with the molten lava like cheese you get fresh out the oven

      In Italy it’s cut with scissors as well to not squish the crust to show all the hard work that went to creating an airy dough

      It was too far away on this occasion, as the genny is behind the trailer and there is a rubber mat underneath, the sound and vibration isn't too bad for the customer ordering

    ive an ooni wood pellet oven and am loving my pizza journey, until last month when i was diagnosed as coelic and am to avoid gluten now for the rest of my life. sad face.

      Ahh mate, feel for you. You torturing yourself watching pizza videos as well 😩 Don't let it stop the journey though! I don't do gluten free as my work and cooking space is so small, flour gets everywhere. Give Caputo's gluten free flour called FIOREGLUT a go though, you can get it from my friends at ADimaria.co.uk 🙌
