Hey Fredrik, I designed it myself but then got some professionals to fit it for me. They sourced an old horsebox for me and refurbished it, if you do yourself make sure you have a trailer/ vehicle with a solid/ reinforced suspension 👌
Yeah, Personal preference. I feel you get more flavour when you put on fresh. With the pizza being so hot out the oven it does pretty much cook it anyway, especially if you close the box.
That's the hardest part. Just try and find a bit of land that has a lot of passing traffic. My first pitch was a church car park on a roundabout. I would also advise you to work on social media so you get noticed. People will come to you asking about parties/ events if they can see the quality online. Good luck 🤞

It's hard to say where to apply because every area and council has different rules but normally if it's private land then you're fine. Hey Alan, you can use any hard wood as long as it's super dry but I personally use silver birch as it gives a nice flame which is important to give a nice charring of the crust.
Probably to do with putting food to your mouth around other people's food, not supposed to touch your face at all while handling food. Also I guess you could cross contaminate by dropping your food into other peoples
Sky's the limit! Depends what you want to do and the contracts/ places to trade from you get. The profit margin on pizza's can be very good compared to other foods

you shouldnt bring tension in the dough before balling, thats nonsense. you do it when balling and have a much easier time if the dough is relaxed.

Depends on the outdoor/ venue temperature for me. Around 55% in the summer, up to 60% in the winter

Yeah, I do always use it within 24 hours though. If you want to keep for longer you can put in the fridge to stall the fermentation process

0.3 grams of fresh yeast per 250g pizza
