    This sounds great...I'll use my duck eggs and will also try adding a little beet puree so the dessert is pink for Valentine's Day! Thanks!

    Thanks for sharing. I just got this book and am trying to work my way through it. I’m going to the store tomorrow so I put organic lemons and heavy cream on my list. I love watching your magical kids pop in and out!

    Do you have to use honey for this? The simmer time seems as though any benefits the honey would have, would be lost.

      Some enzymes might be lost, as opposed to keeping it raw. But it is still a high quality, good sweetener to use. You might be able to substitute another sweetener, but I haven't tried it.

    Would love to buy raw cream to make this dessert or sourcream. I think it is really difficult to collect the top of the milk. When doing gaps should i throw the remaining milk away? I absolutely love raw milk and i have found a nice farmer family but he just has a1 Cows and they are not always on pasture. Unfortunately we have now again cambylobacter infection in my family. But all the other raw milk farmers sell milk from cows which never see grass and just get hay in summer and they are in a huge building with no walls . What would you do when you know there is campylobacter in milk? I realy trust the product raw milk but i do not know if i can trust the kind farmer. Hope you understand my bad englisch

      I usually use a small ladle to skim the cream off. I don't take it all off, so I use the rest of the milk like normal, to make yogurt or something. If I were in that situation, I'd probably try to see if there were any other options for better raw milk farms. Wishing you the best!
