    Katsu Don buri is one of my favorite Japanese dishes!! I feel in love with it while in Tachikawa in 69-73. Now I order it here in USA and its soooooo good and takes me back to Japan!!! Arigato gozaimashita!! Oishii yo!! おいしい

    No problem! Hubby loves Kyoto :) He lived in 'Otsu' just outside of Kyoto for ~ 1 year and loved that area, lucky you for getting to spend some time there!

    Your videos are so well organized and the voice overs are very punctual, informative, concise yet not boring. Thank you for these videos, I've looked through many videos on katsudon and this one has really sold me. I'm a new subscriber and I encourage you to keep bringing on the new sushi and Japanese simple dishes. I don't have the soup stock but can I replace that with sake and soba sauce?

    The sauce/stock is missing Mirin. If you don't have Mirin, substitute it with Sake & Sugar.

      Isn't Mirin and sake alcoholic though? It'd be strange putting alcohol in a dish served to children

      Berries 20 The alcohol evaporates easily. None of the meals that use alcohol in them are actually alcoholic.

    I had beef don from my local Japanese restaurant the other day. And it was AWESOME. I've had katsu but not katsu don. They don't have it there. I think I might try and make this VERY soon.

    i recently discovered what asians do. FISH SAUCE and Sugar on chicken marinade or pork marinade. its amazing. i add salt and pepper, oil, starch and a little water. use this marinade on chicken or pork before your other prep. this makes fried chicken and pork 10x better. marinade 30 minutes to 1 hour or overnight. i also use it for grilling over charcoal. its epic.

    We made this dish with chicken instead of pork. Turned out delicious. The chicken just fell apart after basting in the sauce with onions. Delicious. Thanks for posting!!

    This reminds me of my first holiday in japan :) I ate Katsudon at a small snack bar where you first buy a food voucher from a machine. They also added cheese to the pan, which seems uncommon but was delicious^^. A good amount of broth with the rice is crucial :)

    It was REALLY good. I have fixed it 3 times since then LOL! I think I'm addicted! And I'm really thinking about fixing it again. The only question I have is does it freeze good? I want to make enough to freeze so all I have to do is heat it up,and go. Lol.

    Wow, you're lucky! I'm in the USA now and I don't think I've found Hondashi in any American supermarket I've been to yet :( Brazil is a wonderful place to live, good for you~!

    Jeroy, that's right! We use domino light brown sugar but it's not really because we're about that particular brand, but rather that's the kind that is always sold near where we live. Any kind of brown sugar would work just fine :)

    all these deliciuos recipes and my hometown has no oriental shops where i can find some of the key ingredients, like bonito soup stock! i'm so frustrated! everything looks soooo delicious!! :)

    That rice looks perfect. What brand do you use? Do you add 1.5 cups of water to 1 cup of rice?

      the best ratio is 2 cups of water to every cup of rice. the only time it is altered is when using sushi rice. Which you only use when making sushi.

    Absolutely! All that would change is the cooking time in the oil but you certainly could make this with chicken and I have before. Either meat comes out wonderful, but I prefer the pork version :D

    i wanted to make this tonight but i didnt have everything i needed so i changed it up a bit .instead of pork i used a white fish. it came out wonderfully ,i cant wait to try it with pork !

      Hondashi is the easy way to make it, otherwise you would need to get bonito flakes and kombu, and dried anchovy are optional. The dashi flavor is integral to the dish so there is really no substitute. Hondashi is fairly easy to find these days, major grocery chains should have it in the asian food section.

    Ashley, these are our FAVORITE comments~! We are SO happy to hear that :) As far as freezing goes it's hard to say if it freezes good or not. I refrigerate it long enough where Hubby gets mad at me and thinks it's unsafe to eat :P But, the meat freezes pretty good, however, the sticky rice is hard to freeze and return to 'normal.' So, if you made and froze the meat and had fresh rice to serve it with you'd probably be OK. Does what I wrote make sense?
