We have a family recipe similar to this, but we've never used red yeast powder. Will source some once the lockdown is over.
Red yeast powder is just for the red colour, it doesn't change the taste.

Does it really need the soy sauce? Is there other alternative for soy sauce
Can I include maltose in the recipe? If so, how much sugar should I reduce?
I haven't tried adding maltose yet.

Some bakery supplies shops do have. For mine, I bought red yeast rice from Chinese medicine shop and grind into powder using dry mill.

Yes, it is just for red colour.
Do you cut off the thicker fat of the pork belly?
I'll trim off a little bit if there is too much.
Where can I get the red yeast rice powder?
Red yeast rice is available at Chinese Medicine shop. Grind red yeast rice into fine powder using dry mill grinder and sift through before using. Keep unused portion refrigerated for storage.

So much more work than using the oven.
Well not everybody has oven so this tutorial is helpful for those who don't have one
