I don't think I've heard of this saying either but when I would eat with my ex and his family they knew that I was into my food and couldn't be bothered when I wouldn't say anything, her food was so good. They would just laugh and joke about it.

After baking the feta, you could break it up, put it in a really shallow brine with some salt and acidity (lemon ect.) and maybe oregano/rosemary or something, then take it out and bake it again for a little on a rack just so its not too wet, then brush a bit of the brine on-top at the end and it might end up more like feta.

my mom and I live in different places and due to covid I havent been able to visit and make some food to her, so this video was very emotional for me and brought tears to my eyes. im glad you could make your mom happy, you could tell by her face ❤ thank you for this

One way I like to prepare tofu is freezing it, then defrosting It as it softens it and it’s easier to squeeze the water out.
Yes! Freezing it totally changes the texture...in a good way. 👍😉

Freeze and defrost tofu. You get a better texture and can squeeze out more water (literally chunk the pieces and squeeze in your hand it’ll hold its shape)

I tried the tofu part of the recipe and it was SO good 🤤 I even had supper with my parents and didn't tell them either, fooled em! We're not vegan or even vegetarian but i don't need to eat meat every day, and this was just a great spot on meat substitute. So easy, so delicious. I loved it so much that I have my missing ingredients on my grocery list next time I go shopping to try the "feta cheese"

I made this last night for dinner. My husband, who HATES tofu, ate 3 helpings. The almond Feta was the best recipe I've ever made. Normally it's too sweet but this was perfect- I used green olive brine and kalamata olive brine. Yummmm. Thank you for this.

EDIT: I did the tofu suflaki and it was so good! I kept them in for a bit too long/put the heat too high but they were still really good.
