Hi Angela! A great question (and so sorry I didn't see the comment sooner!) At the time I was going off of a couple of different 'how tos' and wanted to be EXTRA careful as when seeds are TOO wet/damp they can burn before they roast! You definitely DON'T have to dry them after rinsing them! Just giving them a quick rinse and then sticking them in the brine is totally fine! I was using an abundance of caution of which you don't need to do (and neither do I! Lol!)
