Hi! I did find the texture rather dry and sticking to the roof of my mouth. I did try swopping the plain flour for wheat bread flour and found that I created a identical batch to fox’s with a more chewy and less powdery texture, other than that recipe and technique was brill thank you x
Hi Pippa, apologies for the delay in replying. The mixture should be quite stiff. Add as little milk as possible, if any. Also it's important to make sure the butter is super soft when you start. Hope that helps.
Hi @daisybee5943 thank you for trying this recipe. Your biscuits may be floury because they are not cooked enough. Maybe your oven is too high and they are cooked on the outside? Maybe you have used too much flour, so check your weights? Perhaps you could change the brand of flour you use to see if that works. Make sure you mix the ingredients well before piping. These are suggestions that should help you not have floury cookies. I hope this helps.

Whats the best way to maintain the shape of the ridges? I find mine have a tendency to sink and become undefined

Chilling them enough in fridge before baking helps......found this out by accident

Younger generatiions may not know about a "cookie press". Ask your grandma....she may still have one. It makes extruding the dough much easier.
Can you please explain what is a cookie press ?
