- This is my take on a recipe for courgette fritters that seems to be everywhere online*

Ingredients:
500g courgettes (zucchini) grated
100g rolled oats
150g grated cheddar or other hard cheese
75g self-raising flour
2 eggs
1 medium onion
1 teaspoon salt
1 teaspoon marjoram (or oregano, or other herbs of your choice)
Optionally:
tomatoes, peppers, chilli flakes, smoked paprika
Other options to think about - not featured in this video but would certainly be good in this (not all of these at once):
chopped ham
chorizo or salami
olives or capers
anchovies or smoked mackerel
sundried tomatoes or fire roasted peppers
chives or spring onions
sliced pickled jalapeños

I especially liked the sequence towards the end where you were making up different topping variations on the fly. That kind of curiosity and play mixing with plan is great to see.

i've got a pretty successful yellow one in my garden this year. i particularly love them slightly cooked in butter with a liiiiiiiiiiiiittle tiny bit of salt. pure goodness!
I used to hate zucchini (courgette), but I came around to it after running across some preparations that made it utterly delicious. This seems to very much be one I'd like to try! Also, if your Cheddar is making scrapy sounds on the grater, it must be very nicely aged to have those calcium lactate (and maybe also tyrosine) crystals, something I really love to have in my Cheddars.
What are some of the recipes that you think are good? I’ve got a million zucchini’s to use and struggling to make ‘em taste good?
@@moose_sauce2938 not a recipe, but if you have a great recipe that calls for aubergines/eggplants, it would very likely work as well for courgettes. They have more liquid, but salting them to draw out moisture should help
Never found zucchini to be a pleasant addition to any dish, the only good thing I've ever seen is where you can't notice them.
When I have a glut of courgette or a couple large ones I make a soup. Courgette, a few onions, maybe a potato and then either just some nice curry powder or if I have time, various Indian spices. Oh and garlic. Blended smooth. What doesn't get eaten goes in the freezer
Eva definitely earned her cheese treat. She was right there and didn't bump into the tripod! I'm going to try this recipe next week. Do a few shakes of Italian seasoning and maybe caramelize some onion separately just because I like them. Seems like a perfect late summer dish.

We did recently come into possession of a very large courgette (which we gave to my aunt, in exchange for some cake). If we get another one soon, I might try something like this out!
always fun to watch you cooking, gives lot of ideas. i wouldnt know what to make out of a zucchini except make quarter-slices and put them in tomatoe souce and serve it with gnocchi. good ol italian style. difference between you and a real cooking channel is the $50,000 kitchen equipment they own, gives me the feeling "i can do that too" when watching you 👍
You didn't use beans in this recipe, but this channel is now why I eat baked beans. So you do influence others to try new things. My wife loves corgettes (zucchini as we call it here) and this is a great way for me to try and love them with her. Thank you Mike!
I love Atomic Shimp cooking videos. My food tastes are pretty different from his, but he has wholesome comforting Dad vibes that make the videos very relaxing.

I've got a courgette glut this year too. I've made waffles both sweet and savoury, pancakes, muffins, soup and a fried version of fritters. The waffles have been the best especially using cinnamon and nutmeg and brown sugar in them.
My glut of courgettes is just beginning, I never seem to have too much of a problem to eat them all, as I can never seem to tire of eating them lightly steamed roasted or fried (my favourite way being in ratatouille). But if I do, I may try this recipe!

I love them too but as a single person household I swim in them every year since I never plant just one or two of them on my allotment! I give them away to anyone that will accept them 😂
The best thing about ratatouille is it's versatility as an ingredient and it freezes so well.
Vintage cheddar is definitely one of the things I miss after leaving the UK.

They look really good, and you could add all kinds of different spices and extras (bacon, mushrooms, capsicum, grated carrot etc) to differentiate them.
Can't beat fresh from the garden produce if they're grown well.
I grow courgettes mainly for making fritters. absolutely love them. Nice recipes you have done. will need to try them. Anothe good idea is to cut them length ways and bake them, top them with chilli concarne. Thanks for the videos. so varied but alays enjoyable.
I use to do a stuffed courgette recipe with minced beef, for the courgettes that had got a little big. As you hollowed them out you could get rid of the seed/pith area.
Try fermented zucc. Cut into spears, add garlic and some spices, I use mustard seeds and bay leaf. Brine it up and when they're done eat just like cucumber pickles.

To avoid drowning in zucchini this year I would suggest to explore all the super delicious recipes you can do with the flower. I love them and it’s really something you don’t come across so often outside of Italy. They are great in beer batter and fried, they go well on pizza, as a sauce with pasta or stuffed. It is a delicacy

My grandfather used to eat in as I remember in the 1950s & 60s . I recall it was boiled and unfortunately I cannot recall what was added to it or much else. So thanks for taking us down memory lane .

I'm liking that idea. I tried a similar mixture but with rice flour and no oats as a "bake" and it held together really well.
When we made our zucchini bread, we would pre-grate pounds and pounds of them at a time and freeze in single cup portions. This made it really easy to pull out to use as a veggie filler in all kinds of things, including frittatas, pasta sauce, bread, etc.
Ooh these sound great! I'll be forced to cook for myself for a couple days and I have a little bit of courgettes in the garden. I can make these :D
A tip for grating is to turn the box grater down flat with the intended grate side on the top, place it on a tray if you're concerned about courgettes piling out of it. I find the pushing cut is easier on your wrist than holding at an angle and downward. Really nice use of lots of courgette, they look like they would freeze well for a quick reheated breakfast.

I reckon for freezing these, I might bake them only until they're set, then they could be cooked from frozen in a frying pan - thawing and browning a bit as they go

Courgette relish uses a fair bit and it's handy to grate and freeze in portions for winter.

Look up Zucchini Relish, that'll get you plenty of results. We always canned ours growing up.

My mother used to make a tomato zucchini pie. This is pretty similar.
my parents seem to have accidentally hybridized zucchini with some other kind of squash and the result is slightly less flavorful but enormous - this year i have four zucchinis each the size of my head, and a few years ago one of them was 5 feet long

Another cool way to use up courgettes is by freezing them and adding them to smoothies: they act like a banana substitute by making it creamy without the banana flavour

Try giving the oats a blitz in a blender, soaks up the fluids better. Definitely add chilli and paprika for flavour. Liked the pizza style topping. Good recipe Atomic Shrimp.

I do enjoy zucchini bread as well as either pizza boats or taco boats. They're surprisingly versatile!

I love a good courgette recipe! One of our favorites is a cream of courgette soup. Delicious with crusty bread and butter
I sometimes make something similar - I take the water from grated courgettes, add one or two grated potato, some flour or potato starch, egg and then fried them :D this is a little less calories version of potato pancakes (placki ziemniaczane) - really popular dish here in Poland :) best with some meaty gravy or sour cream :P but definitely will try bake them - even less fat ;)

Having had similar issues with courgette quantities, I've started using them as sauce thickeners - if you grate them into things like bolognese sauce, then leave them to cook slowly for a few hours, they dissolve into the sauce and just richen it a bit, sort of like grating carrots in.

Fried courgettes, garlic, herbs, oil, cream, cheese, chilli flakes. Makes excellent pasta sauce you can freeze in portions.

We had a good harvest of courgettes this year and had go at this today .. didn't have any onions or much cheese but even so these are now my favourite way to use up courgettes... thank you.., I added some Chana masala to half of them and they're even better..

Zucchini lasagna is a pretty good way to use up overstock. Labor intensive but so worth it.

Thank you for this recipe. I made the mistake of growing 12 zucchini plants this year. Thus, I am getting 3-4 large zucchini daily and need something other than breads and cakes to use them up.

Awesome video - my partner keeps bringing giant courgettes home from his allotment.. I've souped, curried & stewed them. This looks good 😊
Peel them, dice or shred them, and freeze them to spread out the abundance! I throw them into stir-fries and even Indian food throughout the year because they're so mild as to not really effect the flavor of any dish. I find it's a good way to sneak in some vegetables.
Tin openers tend to be a regular thing that is mentioned on this channel but my mind was recently blown that the Smooth Edge Tin Can Opener exists. They are pretty cheap (less than 10 quid) but I've never heard of them before. Instead of cutting through the lid, they cut through the seem instead which offers a much cleaner cut and smooth edge. Thought it might be something you could be interested in.

I can’t wait to try this! I want to get some red Leister cheese, but being in Texas, my Aldi store only has it occasionally. However, I did just pick up a mature white cheddar (from England) a few days ago. I will use crushed pork rinds instead of oats for less carbs and a tiny bit of rice flower for a starch binder and it stays gluten free. Thanks so much for the inspiration! ❤ from Texas! 😊

The most satisfying thing I learned in this video is that you guys across the pond also eat zucchini bread (and call it courgette cake, which I think is amazing).
Also P.S. warm courgette loaf (zucchini bread) is lovely with butter on it!
There are so many delicious ways to cook zucchini. But if you feel like you have had an overdose and need a timeout from zucchini, you can season them (italian herb blend with garlic) grill them, and stuff them in a jar with olive oil. Makes a nice antipasti for storage.
To use up a courgette you forgot harvest until it grew oversized (XXL zucchini)do this: Stuff the courgette with sauce bolognese and cheese. Bake it in the oven like a casserole. Don´t eat the skin of the big ones. It turrns hard, like some pumpkins.

I may be getting more courgettes from my Mum's garden this week, so think I'll add some oats and cheese to the shopping list and give these a try - they look lovely!
