What kind of tea do you use??
I brew a gallon at a time and use 6 bags of green tea and 3 bags of black tea.

@@Delkolovr2 no problem. I just kind of played with the green and black tea ratios until I got one I liked. Too much black tea and it's too strong for me, not enough black tea and it's not strong enough for me. So after a couple years of trying different strengths that's the one I settled on
Can you use dehydrated strawberries?
I'd definitely give it a try!
My current favorite Kombucha flavor is Lemon Ginger.

I love Kombucha but I can't have sugar at all anymore (blood sugar stuff). I wonder if it is possible to make it without sugar? I don't think so. :-(
The scoby needs the sugar to be able to ferment the and live. I've heard you can try with alternatives like honey or maple syrup but it won't sustain your scoby in the long run. I've never tried it, either
Try a jun scoby!
I know it's a year late, but in case you don't see it, someone who also share the same issue might. If you can't have sugar at all, just ferment your kombucha for a long time. Try at least 21 days and if there is still sugar left, you can leave it longer until like 30 days. The yeast will continue to eat sugar and if you leave it long enough there would be no sugar left. This is how they make kombucha for Keto diet. Your kombucha will be very strong and taste close to vinegar though.
You make it look so easy. I had a SCOBY once and it became...other-worldy...LOL!
hahaha that happens sometimes! Brewing kombucha can be super easy but sometimes I make mistakes, too
Always wash your hands with viniger before handling the scobe in anyway.
I never have and never had a problem. I havebt actively brewed in a few years though.

Whats the caffeine content like at the end. Wanting to go decaf generally but know that its in the teabags of kombucha. Thanks.
Not sure what the final caffeine content is but I don't use decaffeinated tea so I would assume that there is still some in there.

The best way I think is experimenting on your own. Stay curious, try different fruits and herbs, make improves. Then you'll get so many original flavors

Is that fresh ginger or ground ginger pleader?
I use fresh grated ginger root and freeze what I don't use right away so it doesn't go bad sitting in the fridge until the next brew

I just bought some ginger to try. I usually cut up a green apple. MMMmmm very fizzy. Glad you warned me that ginger is potent. Love the video.

I think you're talking about the SCOBY, which is a Symbiotic Colony Of Bacteria & Yeast. It is a living cluster of everything you need to turn sweet tea into the fermented goodness that is kombucha. You can grow one from a bottle of store bought kombucha as long as it is unflavored and raw. If you can't find any near you, you could check your local farmers market, ask in local groups if anyone has an extra, or you can even buy one on amazon. Hope this helps 😊

Thank you so much for the sense of how much ginger to use. Is this similar with turmeric? I saw in one video that turmeric killed scoby for someone and my sense was that that was during first fermentation but I'm guessing if ginger works okay in F2 then turmeric would too since they're similarly strong and similarly antiinflammatory? (That may be ridiculous logic since they are completely different creatures, of course.) Any experience with this? My body is not at all in a ginger mood and very much in a turmeric mood so I'd love to work that in if I can. Really appreciate seing use of frozen fruit too since that's always avail and my body seems to like the kombucha combinations with fruit even though it likes them pretty dry. Thanks!
You could absolutely try turmeric in your 2nd fermentation. As long as it's not in the first fermentation you don't have to worry about it hurting your scoby. I've never done turmeric so I'm not sure on quantities, try a small amount first snd if it's not strong enough for your taste add more next time. Thanks for watching 😊

Do you add extra sugar on your second ferment?
It’s been a couple years since I made any, but thought I had added more sugar to make it a little sweeter?
You can add a little extra. I generally didn't but I did for more tart flavors
So my friend puts the fruit and ginger in the big pitcher when fermenting. Do you not do that? She's new to this so was just asking
I don't because it can damage the scoby. I always remove the scoby before adding any flavoring
After 5 days before drink?
Do you burp your bottles during second fermentation? Do you store your scoby in the fridge?
I don't burp the bottles during second fermentation but I do keep an eye on them and I keep the scoby hotel in the back if a dark cabinet
Dou you defroze the frozen fruits first or directly put in frozen in the 2nd fermentation?
I try to defrost the fruit first because colder fruits can make the second fermentation take longer but I've done frozen before and didn't make a huge difference. Just took a few extra days to carbonate
Whats the point of the scoby hotel?
It's just a place to put the scobys while you're not brewing a batch

Question: how do you keep the fruit from forming a seal at the top of the bottle?
I just gently tip the bottle over while it's still capped, just to moved around the fruit, but not enough to create a bunch of pressure.

it's a mix of black tea and green tea. I have used a lot of different brands. Generally I do 6 bags of green tea and 4 of black tea for 1 gallon of water. You can adjust it based on your preferences by playing with the black to green tea ratios.

How do you get the fruit out of the bottle?
It comes out when your pour it. I've never had any issues with it getting stuck
When do we put our finish kombucha in the fridge ?
About 3 to 5 days after you begin the second ferment. Just check to see if it has reached your desired level of carbonation and then put them in the fridge to slow down the fermentation process.
You mentioned having a drink and return program…. Does that mean you sell it? And if so for how much?
I did a drink and return in my local area for about a year. I haven't brewed kombucha since moving states 14 months ago.

@cjclifford1173 the swing top bottles are the most expensive part which is why I wanted the drink and return option. Most people brought them back. It's been a while but I wanna say I did somewhere around $3 each and they got $1 off their next bottle when they brought the first bottle back and it would continue on like that. Everyone I sold to were friends and neighbors though so I got most of my bottles back

This was a very important video in that I could see that the scoby doesn't need to necessarily be right on top of the tea jar.
Yep it can float around as it pleases as it grows.

it should if you add everything bar from sugar I am pretty sure, though I always add brown sugar to mine. So you could try that as a healthier alternative to regular sugar.@@chindo_translator
